CHETTINAD KARAPANIYARAM

Who don't love chettinad dishes!! everyone loves it.Chettinad karapaniyaram is one among Chettinad dish which is loved by everyone in my family. You can also try my , 1) Karapaniyaram. 2) Wheat paniyaram. The spicy chettinad kara paniyaram recipe is below, INGREDIENTS : Dosa Batter – 4 cups ( recipe here ) Carrot – 1/2 cup (grated). Onion – 1/4 cup ( chopped finely). Urad dal – 1/2 tsp. Pepper – 1 tsp. Mustard – 1/2 tsp. Asafoetida – 1/8 tsp. Curry leaves – a sprig ( chopped ). Green chillies – 2 nos. Hi All, DOSA is one of the dish which is popular all over the world.We love any variety of dosa. I made Gobi Manchurian few days back but too lazy to make chapati to go with manchurian. But if I serve manchurian to dosa my husband will reject as they are not partners.. Finally my tricky brain gave me this idea to serve as Gobi manchurian dosa :) .. Hi All, UTTAPAM...uttapam is not too tough recipe but the spongy ,smooth ,perfect shaped uttapam is the trick and it depends on batter combination and consistency. The recipe is as same as Dosa batter but for utappam you need to take care during adding water. My husband loves uttapam but Iam lazy to make it as it needs little patience to make uttapam. Yesterday I want to surprise him on weekend with his favorite dish for dinner so planned for utapam. I made little twist in garnishing by mixing masala powder and it worked too.We loved it even without sidedish. The recipe is as below, INGREDIENTS : BATTER : Raw rice / Idli rice – 5 cups. I make KARA PANIYARAM with dosa batter , And wheat paniyaram with leftover dosa batter. SPROUTED KAMBU DOSA / SPROUTED BAJRA / DARK MILLET DOSA

Hi Everyone, KAMBU DOSA!! Bajra or Dark millet is very very good for health .But making tasty dishes out of it is important in our home.Even though I make healthier food if it is not tasty no one will eat it. Dosa is favorite for everyone so I add all healthy ingredients in dosa batter and make yummy,crispy yet healthy breakfast and dinner. My mother advises to add kambu along with urad dal while grinding to make kambu dosa.But I will not prepare in that way , Bcoz it looks like I need to make same variety of dosa for 2 -3 days and everyone feels bored. So I make basic dosa batter (recipe here) and refrigerate it . Whatever variety dosa I want to prepare I will add that powder or puree to required amount of dosa batter just 7 hours before cooking and leave them for fermentation. Hi All, Idli and dosa batter is very essential in every south Indian home.Weekly once we will grind the batter and  refrigerate it for a week.The day I grind the batter is good day for me ! I will be in mood “Woooowww!! Idli batter is ready so no worry for a week about bfast and dinner “ its like big achievement . Now the prices of all ingredients went high so we are pushed to a position to cook delicious at the same economical.So I always follow this ec nomical ratio for idli batter and I bet my idlis are best in my family ( very proud!!) . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)).
