HONEY CANDY (THEN MITTAI)

Hi All,
My sweet bonda and then mittai recipe are both similar but only the ratio changes.
I love then mittai right from childhood days and even now it is my favorite.
I was trying to make it and after a few unsuccessful attempts now I made it.
The simple healthy Then Mittai recipe is below,
 Servings : 5 members.

INGREDIENTS :

Raw rice – 1 cup.
Urad dal – 1/4 cup.
Orange food colour – a pinch.
Sugar – 1 cup
Water – 1 1/2 cup.
Oil – for deep frying.
Sugar powder – 1 cup.

METHOD :
  1. Soak rice and urad dal together for 4 hours.
  2. Grind them to fine paste without water. 
  3. The batter consistency should be like ulunthuvadai maavu consistency.
  4. Boil sugar and water to one string consistency and keep it warm.Add a pinch of orange food colour to sugar syrup too.
  5. Now add food colour to batter and mix well.
  6. Heat oil in wide pan and when oil is hot enough, drop a tsp if batter to oil.
  7. You can use either spoon or hand to drop the balls.
  8. Fry till vadais puff up, for 2 to 3 mins.
  9. Don't over fry the vadais to too crisp,then it will not absorb sugar perfectly.
  10. Once vadais are fried to golden brown , remove and add it to sugar syrup.
  11. After 2 hours of soaking, remove from sugar syrup and coat with sugar powder.
  12. Let it dry for 2 or more hours.
  13. Store in airtight containers and enjoy.
  14. The candies stay fresh even for a week.
