BREAD KOVA ROLLS

Hi All, Bread kova rolls , perfect for any festival. Rich in taste and definitely a feast for your taste buds. Try this for this Christmas,   INGREDIENTS: For stuffing: For carrot mixture: carrot 2 cups Milk 1 cup ghee 2 tablespoon cashews 10 raisins 10 cardamom 3 (powdered) For khova mixture: sugar 3/4 cup Khova 200 grams cardamom 3 (powdered) For sugar Syrup: sugar 1 cup water 2 cups For outer covering: Bread 10 slices Milk 1/2 cup METHOD : Fry 200 grams khoya in 2 tablespoon Ghee, add 1 tbsp cardamom Powder and 3/4 cup sugar . Cook till the mixture Thickens and leaves the sides Of the pan    Fry 2 cups grated carrots in 2 tablespoon ghee.   Add 1/2 cup milk when the The carrots turn pale.   Boil till the carrots turn Soft, add to the khoya mix Add 10 each of fried Cashews and raisins    Cook on medium heat till Soft. POTATO MURUKKU/ CHAKLI

Hi All, Easy murruku which you can make it in minutes , yet yummy. Using potatoes gives lovely bright white colour to murrukus. Try this yummy murruku for this festival. Recipe is as below, COOKING TIME : 30 MINS. SERVES : 10 MEMBERS. INGREDIENTS : Rice flour – 4 cups. Potato – 2 nos (medium ) . Butter – 1/2 cups. Asafoetida – 1/2 tsp. Cumin – 1 tsp. Ajwain – 1 tsp. Salt – as required. Water – as required. Oil – for deep frying. METHOD : Cook potatoes to soft ,peel skin. Grind potatoes with butter to fine, silky paste. Dry roast cumin, ajwain till aroma and add it to flour. Add asafoetida , ground potatoes paste , salt and mix well. Add water little by little to form non sticky yet soft dough. Heat oil in wide kadai till hot. In murruku press fill the dough and squeeze in banana leaf or plastic sheet. Then add them to hot oil and fry for 2 mins till light brown and bubbling s

HONEY CANDY (THEN MITTAI)

Hi All, My sweet bonda and then mittai recipe are both similar but only the ratio changes. I love then mittai right from childhood days and even now it is my favorite. I was trying to make it and after a few unsuccessful attempts now I made it. The simple healthy Then Mittai recipe is below,  Servings : 5 members. INGREDIENTS : Raw rice – 1 cup. Urad dal – 1/4 cup. Orange food colour – a pinch. Sugar – 1 cup Water – 1 1/2 cup. Oil – for deep frying. Sugar powder – 1 cup. METHOD : Soak rice and urad dal together for 4 hours. Grind them to fine paste without water.  The batter consistency should be like ulunthuvadai maavu consistency. Boil sugar and water to one string consistency and keep it warm.Add a pinch of orange food colour to sugar syrup too. Now add food colour to batter and mix well. RAGI DOSA

Hi, Ragi Dosa, When all my Kannada neighbors make Ragi mudhe so easily Iam the one always struggle to make ragi balls. So instead of fighting with ragi balls I carefully shifted to other options like Ragi roti and Ragi dosa. There are so many versions for Ragi dosa and this is my second version. click below for other versions. 1) Flax seeds ragi dosa. 2) Easy ragi dosa.   SERVING : 3 members. PREPARATION TIME : 10 HOURS. Lets jump to the recipe, INGREDIENTS : Raw rice – 1 cup. Urad dal – 3/4 cup Ragi powder – 1 cup ( click here for recipe). Aval/ Poha – 1/8 cup Fenugreek – 1/2 tsp. Curry leaves – 1/2 cup Cumin / Zeera – 2 tsp. Dry red chillies - 6 Salt – as required. Oil – for making dosa ( I use Gingelly oil). METHOD : Wash and soak rice, dal and fenugreek together for 3 hours. Grind rice , dal , ragi powder, poha, fenugreek, curry leaves , cumin, chillies to fine paste with required amount of water.

AVAL MIXTURE

Hi, One of the most easiest snack that you can make in minutes, Aval mixture .. the recipe is as below, COOKING TIME : 10 mins. SERVINGS : 4 members. INGREDIENTS :  Poha/ Aval : 1 cup. Turmeric powder - 1/4 tsp. Chilli powder - 1 tsp. Peanuts - 1 tbsp. Roasted channa dal / Pottukadalai/ Chutney Kadalai - 2 tblsp. Curry leaves - a sprig Oil - 5 tblsp. Salt - 1/2 tsp. METHOD : 1) Heat oil in a wide pan, when oil is hot, low down the heat . 2) Fry peanuts till brown, remove from oil and drain oil completely. 3) Fry channa dal till golden brown, remove from oil and drain oil completely.Followed by curry leaves. 4) Finally add poha and fry for 1 minute till golden brown. 5) Poha fries too fast so be careful not to burn. 6) Remove from flame, drain oil completely. 7) To drain oil completely , keep the fried aval in cotton towel or tissue paper to drain the oil completely. 8) After 10 mins , in a bowl add fried aval, chilli powder, turmeric powder

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
