WARM WATER CHAPATI / BEGINNER GUIDE FOR SOFT CHAPATI

Hi All,
If you are a beginner in cooking ,then chapati is the toughest task that needs a lot of practice.
When I was learning cooking my chapatis will be either crisp like disc or rubbery that you need to dentist after chewing😭
So I try so many versions to make my chapati perfect and this warm water method is one success method , This method is so easy that your chapatis will be very very soft and light.
A few tricks to make your chapatis perfectly soft and puffy are ,
Add water little by little while kneading .
Don't knead dough too dry , make slightly sticky dough so that while toasting it comes to perfect softness.

The recipe of perfect soft chapati is below,

COOKING TIME : 1 hour.
SERVES : yields about 10 chapatis

INGREDIENTS :
Wheat flour – 2 cups.
Salt – 1/2 tsp.
Warm water – 1 cup ( appx).
Oil / ghee – few drops.

METHOD :
  1. In a wide bowl add wheat flour ,salt and mix , make a well in middle of flour and pour hot water little by little and start mixing.
  2. When you feel the entire dough is wet , stop adding water and start kneading.
  3. If the mixture is too dry then add little water and keep kneading until a sticky dough mixture is formed ( as in picture).
  4. At this stage stop adding water and keep kneading until dough forms a soft ball , the dough must not stick to the bowl ( as in picture).
  5. Keep the bowl closed and let the dough sit for 30 mins.
  6. After 30 mins , make golf ball sized balls .
  7. Dust your rolling pan slightly with flour and place a ball .
  8. Sprinkle some flour over the ball and start rolling , roll gently to form a medium sized circle.
  9. The chapatis must not too thin nor too thick .Must be in medium thickness as like in picture.
  10. Heat oil in a tawa ,spread few drops of oil over hot tawa.
  11. Place flatten chapatis on tawa , sprinkle oil and heat in medium heat till chapati changes its colour.
  12. Now flip the chapati to next side , and let it boil for a minute . Once chapati starts bubbling,using your spatula press slightly .
  13. When slightly pressed chapati will start puffing up , then flip the next side and repeat the same step.
  14. Flip thrice and when bubbles starts turning to brown colour , remove from flame. 
  15. Spread a drop of ghee on one side of chapati and Store in hot case to stay soft for long time.
  16. Same way make chapatis out of entire dough and store them in hot case.
  17. Serve hot with any gravy of your choice , I served with Paneer white gravy , you can serve with bajji mirchi gravy , paneer butter masala , moong dal gravy , karaikudi chicken gravy of your choice.
NOTE :
  1. Water level may vary depending upon quality of wheat flour , My flour consumed 1 cup of water.
