BEETROOT BONDA

Hi All,
BEETROOT BONDA!! More than savories we love fresh fried snacks much, so every weekend I use to make any type of bajji ,bonda.And this beetroot bonda I make it often but everytime when I finish making there will be nothing left to take pictures , everyone gobbles it up before I click pictures😡
So this time I prepared ahead ,first I clicked and then I served 😊😊 so saved.This is our favorite bonda since childhood , The beetroot mixture itself has amazing taste that we will finish the beetroot balls itself before making it into bonda .
Flavourful , colourful and ofcourse spicy Beetroot bonda recipe is as below,

Yields about : 25 bondas.

INGREDIENTS :
Beetroot – 2 cups ( grated)
Onion – 1 cup.
Green Chillies – 2 nos.
Salt - as required.
Potato – 2 nos ( medium sized).
Oil – 2 tsp + for deep frying.
Mustard – 1/4 tsp.
Curry leaves – few ( i didnt add).
Turmeric powder – 1/4 tsp.
Chilli powder – 1/2 tsp ( optional).
Bajji mix – 1 cup.

METHOD :
  1. cut potatoes into halves and boil them till soft . I cooked in cooker with immerse level water for 3 whistles.When cooked remove the skin and mash potatoes well without lumps(I forgot to take pictures here..sorry).
  2. Scrap the beetroot skin and grate them , chop onions and green chillies to small pieces.
  3. Heat oil in pan and add mustard , when mustard starts spluttering add chopped chillies , onions and saute till translucent.
  4. Then add beetroot and fry in medium flame for 5 mins ,till they starts shrinking and raw smell of beetroot leaves . 
  5. Now add turmeric powder , chilli powder , salt ,2 tsp of water and cook till the vegs are cooked but little crunchy.
  6. Don't cook beetroot to too mushy , so add little water.
  7. When done add mashed potatoes and mix well to form a mass.
  8. Remove from flame , let the mixture come down to room temperature.
  9. Make small balls out of it .
  10. In a bowl add bajji mix , water little by little and keep mixing till it forms to idli batter consistency ( as in picture).
  11. Heat oil in a wide kadai.Take each balls and dip in bajji batter completely ,drop in hot oil gently.
  12. Deep fry the bondas in medium flame till golden brown , remove from oil , drain the oil and serve hot.
  13. I served with bonda chutney , you can serve with chutney or enjoy as it is.Bonda tastes great even without any chutney.
    NOTES :
  1. You can add any vegs along with beetroot like carrot , cabbage, peas etc.
  2. Vegs must be cooked crunchy for better taste and texture.
  3. Instead of bajji mix , you can mix besan flour with salt , chilli powder , asafoetida , cooking soda ,water and make bondas.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
