SURNALI DOSA

தமிழில் காண : கிளிக்

Hi All,

SURNALI DOSA!! Actually this is sweet version of dosa but we can make it less sweeter too.
Without Idli ,dosa batter I will go mad ,especially for making breakfast. In morning hurry idli and dosa batter are my saviours. So I always try to make different varieties of batter and store for a week.
I recently came across this dosa recipe and as it looked too easy I made it and it was very very spongy , super tasty too.
I served with Onion chutney , you can serve with any spicy sidedish.
The recipe is as below,
RECIPE SOURCE : cookwithkushi.com
SERVINGS : 10 members.

INGREDIENTS :
Raw rice – 2 cups.
Poha – 1 cup.
Coconut – 1 cup ( chopped).
Salt – as required.
Ghee or oil – 1 tsp.

METHOD :
  1. Rinse and soak raw rice in immerse level water for 4 hours.
  2. After 4 hours of soaking add soaked rice ,washed poha in your blender and grind to fine paste.
  3. Grind coconut to fine puree and add it to dosa batter and grind once.
  4. Don't add too much water while grinding , add enough to make fine batter.Batter must be like uttapam batter consistency.
  5. Let the batter ferment for 8 hours or overnight .
  6. After fermentation add salt , mix well.
  7. Heat dosa tawa and spread few drops of ghee or oil on hot tawa.
  8. Pour a ladle full of batter in middle of tawa and don't spread the batter (then you will not get spongy dosa).
  9. Sprinkle oil or ghee , close the tawa and cook in medium flame for 5 mins , until dosa base turns golden brown and top is cooked ( no need to flip to next side).
  10. Remove from flame and serve hot with onion chutney , red chilli chutney , kara chutney of your choice.Onion chutney went great with this dosa.

    HAPPY COOKING!!

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
