EGGLESS MANGO SEMOLINA CAKE

Hi All,
This year I wanted to celebrate my birthday with my cake 😃Normally I don't bake cake for my birthday because I always wants my family to make it special , but this year I want to make the day special myself so baked this lovely EGGLESS MANGO SEMOLINA CAKE .
And this is the first time Iam trying genache also , both cake and genache came out so perfect and made my birthday so special.
The cake has some healthy ingredients like rava and fresh mango puree so everyone liked it and enjoyed.I decorated a little with butter cream and it added additional flavour to cake.
As I want bright yellow colour I added white sugar , you can replace white sugar with organic cane sugar and make your cake complete healthy.

The easy recipe is as below,
CAKE RECIPE SOURCE :MS.KAVERI OBHAN (I ALTERED THE RECIPE SLIGHTLY AS PER MY REQUIREMENTS)
INGREDIENTS:
Rava / Sooji – 2 cups / 360gms.
Mango puree – 1 1/2 cup.
Butter – 1/2 cup – 100 gms.
Sugar – 1 1/2 cup – 320 gms.
Baking powder – 2 tsp.
Cardamom – 5 nos (crushed).
All purpose flour – 1 tsp ( for dusting only).


METHOD :
  1. Pre-heat oven @ 170” C – 35 mins.
  2. As my sugar crystals are big , I powdered them.If you are using smaller sugar crystals ,you can use them as it is.
  3. Mix sooji , sugar , cardamom and baking powder.
  4. Add softened butter and mix evenly.
  5. Along with the above mixture add mango puree and mix.
  6. Let the mixture rest for 15 mins till the it becomes little thick like cake batter consistency.

  7. Grease your baking pan with butter and dust it with flour.
  8. Pour the cake batter till half and bake for 35 mins or till tooth pick comes out clean.
  9. Remove from oven and let the cake comedown to room temperature.
  10. Then remove the cake from pan and let it completly rest in wired rack for 30 mins.
  11. Done!! slice and enjoy as it is or you can frost with genache as below.
MANGO GENACHE :
INGREDIENTS:
Mango puree – 1/2 cup.
Sugar – 2 tablespoon.
Gelatin – 1 tablespoon.
Water – 150 ml.

METHOD :
  1. Combine water , sugar in a pan and heat till sugar dissolves.
  2. Remove from heat ,add gelatin and stir well till dissolves.
  3. Now add mango puree and mix well.Let the mixture come down to room temperature.
  4. Pour it over the cake ( dont use spatula to spread ) evenly and refrigerate the cake for 1 hour for the genache to set.
  5. Once set slice and enjoy.
  6. I piped little butter cream for decoration , you can skip it.But buttercream and mango combination tasted good too 😋😋.
    NOTES :
  1. Make sure your mango puree is in creamy consistency , if it is too thick add little water , if the puree is too thin then after too sooji let the mixture sit for more time to thick.
