ROSE KULFI ( TRADITIONAL METHOD)

Hi All,
As I have already mentioned you in my previous post about traditional method of making kulfi.
You can make kulfi in two ways , one is shortcut method by using heavy cream or whipping cream and other is this traditional method.
Though the shortcut method tastes amazing , this traditional method already ranks first :).
Only thing you need to concentrate is the consistency of the milk , if the final mixture is too watery then you will not get creamy kulfi and if the mixture is too thick then it will end up in kova.
So make sure your final mixture is in right creamy consistency.

The simple recipe is below,
COOKING TIME : 30 MINS.
SERVES : 2 CUPS.
INGREDIENTS :
Milk – 1 litre
Almond – 4 tsp
Pista – 4 tsp
Cardamom – 3 nos
Cornflour – 1 tsp
Condensed milk – 2 tsp (optional)
Rose essence – 1/8 tsp
Rose water – 1 tsp
Sugar – 5 tsp.

METHOD :
  1. Boil milk in a pan till it foams up , now simmer the heat and let the milk boil in low heat till it reduces to half.Keep stirring for every 2 mins.
  2. In the mean grind nuts to coarse powder.Powder cardamom to fine powder.
  3. Take 2 tsp of milk and mix cornflour to it.
  4. When milk reduces to half add sugar , cornflour mixture and keep stirring.
  5. If you are adding condensed milk , you can add at this stage.
  6. After 30 mins of boiling , milk will reach creamy consistency .
  7. Now add nuts , Rose essence ,rose water and mix well.
  8. Let the mixture come down to room temperature .
  9. When done , pour in moulds , garnish with chopped nuts , refrigerate for 8 hours or more till the kulfi is set.
  10. Remove and enjoy.

WARM WATER CHAPATI / BEGINNER GUIDE FOR SOFT CHAPATI
