PALEO
BOTTLEGOURD KOOTU!! This is one of my paleo lunch , I always keep
bottle gourd in my fridge . Whenever Iam busy or need any quick
filling lunch I will make this kootu and have it with egg omelette.
It
is very filling and yes it helps in weight loss , Bottle gourd also
helps you from dehydration.

INGREDIENTS
:
Bottlegourd
– 2 cups ( chopped).
Turmeric
powder – 1/4 tsp.
Salt
– as required.
Coconut
– 1/8 cup.
Dry
red chillies – 4 nos.
Coconut
oil – 1 tsp.
Curry
leaves – a sprig.
Mustard
– 1/4 tsp.
METHOD
:
- Peel the skin of bottlegourd , deseed and chop them to medium sized pieces.
- Boil bottlegourd with salt and turmeric powder till soft.
- Grind coconut , dry red chillies to thick little coarse paste with little water ( not too coarse).
- Add the ground paste to boiled vegetable and boil till kootu turns thick absorbing the masala.
- In a small pan heat coconut oil ,add mustard and when mustard starts spluttering add curry leaves , remove from flame.
- Add the sauteed ingredients to kootu , give a quick mix and serve.
- As Iam in paleo diet I will have it with Egg omelette or as it is.
- You can serve as sidedish for rice , sambar , dosa , chapati , roti too.
NOTES
:
- No replacement for coconut oil , pls use coconut oil.
