STUFFED FOCACCIA BREAD

Hi All,

So here comes finally my Focaccia recipe, though in lock down I make many dishes but never gets time to post or to click the final pictures. This focaccia bread I made for evening snacks few days back and I managed to click final photos with step by step pictures but no time to post the recipe only.

So here about the recipe, the recipe is so simple like our other bread recipes, but the elements are added during baking makes the major difference in flavour and texture. We can add any vegs of our choice. And, the focaccia bread will not be stuffed bread but since our family wants chicken in everything, I made it as stuffed bread and it tasted great too.

You can skip the stuffing part and make it as plain traditional focaccia bread too.

Here comes the easy and yummy focaccia recipe,

COOKING TIME: 2 hours

SERVINGS: 4 members.

INGREDIENTS:

FOR BREAD:

Maida – 3 cups

Butter – 5 tblsp (room temperature)

Garlic – 6 pods (finely chopped)

Warm Water – 1 1/8 cup

Instant active yeast – 1.5 tsp.

Sugar – 2 tsp

Onions – 1 no (medium sized),

Oregano or pizza toppins or mixed herbs – 2 tsp.

Chilli flakes – 1 tsp

Dried rosemary – 1 tsp.

Cheese - 2 tblsp (optional).

Vegs - 1/2 cup ( capsicum, cabbage, onion, carrot of your choice).

FOR CHICKEN STUFFING:

Chicken – ½ kg (bone less)

Oil – 1 tsp

Cumin – ½ tsp

Onion – 1no.

Coriander powder – 1 tsp

Chilli powder – 1 tsp.

Salt -for taste.

Turmeric powder – ½ tsp

Chicken masala – 1 tsp

FOR GRINDING:

Garlic – 10 pods

Ginger – ½”

Onion – 1 no (big).

Tomatoes – 2 nos

METHOD:

FOR BREAD:

1) In a wide bowl add flour, salt, sugar, yeast, garlic, herbs , chilli flakes, butter and mix evenly.

2) Add warm water and mix well with spatula to form a sticky dough.

3) Knead for 10 mins to 20 mins to form smooth dough.

4) In a greased bowl, place the dough and cover for 1 hour till it doubles in size

5) After a hour, punch the dough and knead for 3 mins .

6) Divide the dough into two parts.

7) Grease the baking tray with butter and spread one part of dough and spread cheese.

8) Spread the chicken evenly on the dough, place the another part of dough and spread gently.

9) Grease the top layer with little butter and make pricks with fork.

10)     Spread the vegs according to your desired patterns and again cover it for 30 mins for second proofing.

11)             After 30 mins bake in 180” C pre-heated oven for 30 mins or till the top layer turns golden brown. Remove from oven and let it come down to room temperature.

12)             Remove and enjoy soft and yummy focaccia bread.

FOR CHICKEN STUFFING:

1) Grind ginger, garlic, onion and tomatoes to fine paste.

2) Pan heat oil, add cumin, chopped onion and saute till brown.

3) Add ground paste and saute till raw smell leaves, followed by chilli powder, turmeric powder, coriander powder, chicken masala and saute for a minute.

4) Add chicken pieces, cover, and cook till chicken cooks to soft and gravy becomes super thick.

5) When the gravy completely dry losing all its moisture, remove from flame and spread in bread dough.

NOTES :

1) Actual recipe uses olive oil , I replaced with butter.

2) I used available vegs and few chicken pieces on top layer, you can use onions, tomatoes, capsicum.

3) You can bake without stuffing too; the bread tastes delicious without stuffing too.

4) I used chopped garlic, you can make it as garlic paste and add in flour.

5) In case if you are using active dry yeast , activate it before adding it to flour.
