BLACKURAD DOSA (ALAGAR KOVIL SIMILAR)

ALAGAR KOVIL DOSA!!

This is one old recipe which I saved it for months but somehow missed to post it .

Last week I was cleaning my laptop memory and then I noticed I missed to post this yummy, healthy recipe. Actual Alagar kovil dosa will be very thick with instant rice flour added and kept it for fermentation but I used my regular method of soaking and grinding to make this healthy dosa . Also for making dosa they will add more ghee , but I added very less ghee like my normal dosa. Hence we cannot say it as Alagar kovil dosa exactly but I an assure you it is yummy, healthy and aromatic dosa.

Here is the recipe for protein rich black urad dal dosa,

PREPARATION  TIME : 5 hours.

COOKING TIME : 5 mins.

SERVINGS : 10 members.

INGREDIENTS :

Raw rice – 3 cups

Black whole urad dal – 1 cup

Cumin – 1 tsp

Pepper – 2 tsp

Asafoetida – 1/2 tsp

Curry leaves – 1 spring

Ginger – 1 tsp

Oil / ghee – few tsp for dosa.

Salt - as required.

METHOD :

1) Soak rice and dal together or separately for  4 hours.I soaked separately.

2) Grind dal with skin on to fine paste, followed by rice, grind rice to little coarse batter .

3) Mix them together along with salt and ferment it for 4  to 6 hours.

3) Crush cumin, pepper, asafoetida , curry leaves, ginger to coarse powder.

4) Add the crushed powder to batter and let it rest for 30 mins.

 5) Heat dosa skillet, spread ghee, spread dosa batter to a thick layer and dizzle little ghee on top.

6) Keep the flame low, close the skillet and let the dosa boil for 3 to 4 mins.

7) Once the edges turn to golden brown, remove from flame.

8) Boiling at one side will give you a spongy, porous dosa.

9) Serve hot with any spicy chutney.
