EGGLESS CHOCOLATE FUDGE CUP CAKES

Hoping everyone is well and good. 

it has been soooo long since I posted any recipe. Photography and other commitments keeps me whole day busy.

Today I am here with a simple chocolates fudge cup cake recipe. this recipe is such simple and fool proof recipe that i can make it anytime anyway.

without much dragging here below is the recipe,





COOKING TIME : 30 MINS.

SERVINGS  : 12 CUP CAKES.


INGREDIENTS : 

Maida - 1 cup

Cocoa powder - 1/4 cup

Powdered sugar - 3/4 cup

Baking soda - 1/2 tsp

Baking powder - 1/2 tsp

Curd - 6 tblsp

Milk - 5 to 6 tbslp

Butter or odor less refined oil - 5 tblsp

Vanilla essence - 1 tsp.

Dark chocolates - around 60 gms - chopped to chunk sizes to 12 to 13 pieces


METHOD :

1) In a mixing bowl add curd, baking soda, baking powder and mix well. Keep it aside.

2) Sieve flour, cocoa powder twice.

3) Add melted butter/ oil , powdered sugar, curd, vanilla to curd bowl and mix well evenly.

4) Add flour mix little by little and mix using fold method.

5) Add milk little by little till till we get ribbon consistency.

6) Pour 1 tbslp in each cup cake mold , keep chocolate in middle.

7) Pre-heat oven to 170"C - 25 mins.

8) Bake for 25 to 30 mins till tooth pick comes out clean.

9) Remove from oven and let the cakes cool down completely.

NOTES : 

1) Cup cakes bakes very fast when compared to normal cakes so 30 mins is enough,

2) Fill only 1/4 level in molds for even top.

3) Good quality of chocolates is required to give the perfect fudge texture.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
