BAKERY STYLE EGGLESS HONEY CAKE

Hai All,

This is one of our fav cake which we always taste in Bangalore, though we get such honey cakes in our home town, but still Bangalore cakes are very unique and amazing flavoured.

This recipe I have already posted in my blog, but still I'm posting it again for you all to read them easily instead of searching again.

Unlike other cakes, honey cake shelf like is not too long, due to coconut flakes and diluted jam this cake must be consumed within three or four days when refrigerated.

The easy , yummy cake recipe is as below,


 

Cooking time : 45 mins.

Servings : 20

INGREDIENTS :

Maida – 2 cup
Sugar –1 cup
Baking powder – 1 1/2 tsp.
Baking soda – 1 tsp ( I used cooking soda).
Oil – 3/4 cup.
Curd – 1 1/2 cup.
Milk – 3 tblsp (optional).
Vanilla essence – 3 tsp.
 
FOR HONEY FROSTING: 
Honey - 2 tsp.
Mixed fruit jam - 3 tblsp.
Water - 5 tblsp.
coconut flakes - 2 tblsp.
 

METHOD :

1) In a wide bowl beat curd, Sugar, Vanilla essence till sugar dissolves and reaches lump free mixture. 

2) Add oil and beat for 30 seconds.

3) Add baking powder, baking soda and whisk till soda starts bubbling. 

4) Bubbling indicates activation of baking soda, you can see small bubbles popping up , this is right time to add flour.

5) Sieve flour twice, and add them little by little to above mixture.

6) If the batter is very thick then add milk to form ribbon consistency.

7) Grease baking tray with oil or butter and dust with flour.   

8) Fill half of the tray with batter, tap it slightly to remove air pockets. This helps in avoiding cracks and even texture of cake.

9) Bake at 170" pre heated oven for 40 mins.

10) When inserted a knife it must come out clean, remove from oven and let it cool down completely. when cooled remove from tray and let it rest for 30 mins.

11) Poke holes all over the cake and keep them aside till we prepare frosting.    

12) In a small kadai add water, honey and boil till honey dissolves completely, remove from flame and let it cool down .

13) Same way boil 2 tsp water and add jam to it, mix and boil for 1 minute in very low flame. The jam mixture must be creamy flowing consistency. 

14) Now slice the cakes in desired size, then sprinkle the honey water on all sides of the cake slices.

15) Spread jam mixture on top of the cake and roll the cake in coconut flakes or sprinkle flakes on top of the cake.

16) Refrigerate for 2 hours and enjoy.
