PIZZA BASE

Hi All, Since due to lock down, my cooking time extended ,messy house , sink full of vessels. But still cooking for family always joyful. But availability of ingredients is biggest challenge, so with available nearest ingredients I make all the dishes. Even this pizza was made with available ingredients. My daughter and me was carving for pizza so badly, but we cannot order outside so I decided to make it in home. I made it with wheat as we don’t find much difference in flavors between maida and wheat flour pizza. You can even make it with maida or combination of wheat and maida. But once you start making pizza at home , you never go back to any pizza points, home made ones are tastier, flavorful and moreover preservatives free. Hi All, Briyani masala is one which you always need to make it in home and store it. Home made masala powders are always best, so if possible make it in home and save them. I brought these spices from Kochi spice market, which was of super quality . If you get chance to visit Kochi never miss spice market for amazing spices. COOKING TIME : 30 mins. SERVING : 1 CUP. INGREDIENTS : Coriander seeds – 1/4 cup. Shahi jeera – 1 tblsp. Pepper – 1/2 tblsp. Nutmeg – 1/2 piece ( if small then add 1). Mace – 2 nos. Green Cardamon – 10 pcs. Cinnamon 1” piece – 2 nos. Marati mokku – 2 nos. Blackstone flower – 2 tsp. Bay leaf – 3 nos ( medium sized). Black cardamon – 3 nos. Star anise – 3 nos. Cloves – 3 nos. Fennel – 1 tsp. Dry red chillies – 6 nos. Hi, Rasam is one comfort food which I make when Iam in really hurry, or sick. Home made rasam powder aroma is wonderful than store brought. And also it is so easy to make. COOKING TIME : 20 MINS. SERVING : 1 CUP. INGREDIENTS : Toor dal – 1/4 cup. Coriander seeds – 1 cup Channa dal – 1/4 cup Cumin – 3 tblsp. Pepper – 2 tblsp. Fenugreek – 1/2 tsp. Asafoetida – 1/2 tsp. TOMATO KETCHUP / தக்காளி கெட்சுப்

Hi , When my kid loves ketchup , I thought of trying in home. After a couple of attempts I got perfect taste , Inspired by Rita Arora's recipe in Betterbutter , tried this and it was a success. Here recipe for you , INGREDIENTS : Tomatoes – 20 nos. Cinnamon – 3 nos. Cloves – 3 nos. Cumin – 1 tblsp. Coriander powder – 1 tsp. Sugar – 1/4 cup. Chilli powder – 5 tsp. Vinegar – 7 tblsp. Tamarind water – 2 tblsp. Salt – 1/2 tsp. METHOD : In cooker add tomatoes and all spices except chilli powder, vinegar. Boil for 4 whistles. Once pressure subsides , open and let the mixture cool down. Grind it to fine puree and stain it. In kadai , add the ground puree, chilli powder, vinegar , tamarind water and salt. HOME MADE BUTTER

Hi, HOME MADE BUTTER! Whatever brand butter you use, nothing can beat the taste and flavor of home made butter. Fresh, soft and slight tangy butter tastes divine. Even from our packet milk we can make butter but may be the quantity differ according to fat level in milk. I make butter from Nandhni milk, I will store the malai from milk and curd in refrigerator and for every 10 days I will make butter. You can make ghee from this butter too ( recipe link here) . Healthy, hygienic home made butter recipe is below, INGREDIENTS : Malai – 3 cups. Water- 6 cups. Beater or Mixer. METHOD : You can collect malai from milk or curd or combination of both. Boil milk and keep it open till it comes down to room temperature. When cooled down, you can see the malai or aadai floats as layer. Gently remove the malai and store in a bowl. தமிழில் காண : கிளிக்  Hi , I made this buttercream to decorate my Mango sooji Cake , as I already frosted the cake with mango genache so I used little buttercream for decoration only .For my surprise buttercream and mango combination was quite amazing and everyone like it. Simple ,yet delicious buttercream recipe below, INGREDIENTS : softened butter – 1 cup powdered sugar / icing sugar -2 cups. vanilla essence – 1 tsp. milk – few tsp. METHOD : Make sure your butter is in room temperature . Add butter in a bowl and beat till it becomes light in colour and puffy. Then add sugar little by little and keep beating in medium speed . Once complete sugar is added and mixed , add vanilla and beat in high speed. In between if the cream looks too dry add little milk and keep beating. Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)).
