MUTTON THUVARAI (MOCHAI) KUZHAMBU

Hi , In Bangalore we get good quality mutton ( goat meat), but you need to be cautious in selecting meat. Here sheep meat is more preferred than goat meat by everyone but the fat content in sheep meat much higher than goat meat. After cooking when cooled the sheep meat gravy has a layer of fat froze and floating on top. So I prefer goat meat, we like the taste and flavour of goat meat. Now it is the season of beans in Bangalore, it starts around end of nov and ends by feb mid. I try to make as much dishes with all types of fresh beans. But I never combined vegs and non veg in one dish. This is first time im trying and really we loved the combination. MUTTON SEMI GRAVY (VIDEO AND TEXT RECIPE) - மட்டன் செமி கிரேவி

Mutton semi gravy with fresh spices. INGREDIENTS : Onions – 2 Cumin – 1 tsp. Coconut oil – 2 tsp. Tomatoes – 2 Curry leaves – a sprig. Mutton – 500 gms. Coriander leaves – 1/8 cup. FOR GRINDING : Onion – 2 Turmeric powder – 1/2 tsp Dry red chillies – 4 Coriander seeds – 2 tblsp. Pepper – 2 tsp. Cardamon – 3 Cinnamon – 5 Cloves – 6 Ginger – 2 pc. Garlic – 20 pods. Refined oil – 1 tsp. METHOD : Here is the video for your easy ref, Heat oil , add onions and saute till golden brown. Empty the fried onions to a bowl and in the same pan add rest of the ingredients except ginger and garlic and roast till brown. When done switch off and add ginger garlic, fried onions and mix once . My grandmother grind the meat in hand grinder for hours to make it into fine paste and then grind masala also in hand grinder , The traditional hand grind method tastes amazingly divine but now those traditional methods became very impossible. I tasted this mutton vadai in Madurai Kumar Mess in Chennai , there I tasted few Madurai traditional dishes and I loved this Karivadai.Since then I was searching for perfect recipe and finally after a couple of trials I came out with this final awesome recipe. This mutton briyani was very aromatic , with mild flavours . Little patience in cooking and lots of love in cooking makes your briyani amazing. Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)).
