MUTTON BRIYANI

Hi All,
Here we get good quality mutton so I make mutton dishes often.But I noticed I have not posted any mutton briyani 😯.So this time while making briyani remembered to click photos.
This mutton briyani was very aromatic , with mild flavours .
Little patience in cooking and lots of love in cooking makes your briyani amazing.

The lovely mutton briyani recipe is as below,

INGREDIENTS :
Mutton / Goat meat – 1/2 kg.
Zeera samba rice – 2 cups.
Mint leaves – 1/2 cup.
Coriander leaves – 1/2 cup.
Chilli powder – 1 tsp.
Garam masala or Briyani masala – 1 tsp.
Lemon juice – 1 tsp.
Salt – as required.
Ghee – 5 tsp.
Hot water – 1/2 cup.

Whole spices :
cinnamon – 1” piece – 3 nos.
Cloves – 8 nos.
Cardamom - 1 no.
Marati mokku – 1 no.
Black stone flower – 1 no.
Star anise – 2 nos.
Bay leaf – 1 no.

FOR FRYING RICE :
Ghee – 1 tsp.
Cinnamon – 1 no.
Cloves – 2 nos.
Bay leaf – 1 no.
Onions – 1 no ( medium sized).
Coriander leaves – 2 tsp.
Mint leaves – 2 tsp.

FOR MARINATION :
Curd – 1/4 cup.
Ginger garlic paste – 1 tsp.
Red chilli powder – 1 tsp.
Garam masala / briyani masala – 1 tsp.
Lemon juice – 1 tsp.

METHOD :
  1. Wash and clean meat well with running water and marinate with above marinating ingredients for 1 hour.
  2. Chop onions lenthwise , chop tomatoes too.
  3. Wash and rinse rice well with running water and soak rice in water for 30 mins.Drain the water and keep the rice aside till use.
  4. Heat 3 tsp of ghee in a cooker and add the whole spices ,saute in low flame till spices turn brown and aroma comes.
  5. Add chopped onions , ginger garlic paste and saute till golden brown.
  6. Then add coriander leaves , mint leaves,tomatoes and fry till mushy.
  7. Add chilli powder , briyani masala and saute for a minute.
  8. Add marinated mutton pieces , mix well for a minute .Add hot water , close the cooker and cook for 5 whistles or till mutton cooks soft.
  9. When pressure subsides ,open the cooker and seperate water from mutton pieces and keep it aside.
  10. In a wide pan heat 1 tsp ghee ,add bayleaf , cinnamon , cloves ,mint leaves , coriander leaves , onions and saute till onions turns translucent.
  11. Then add soaked rice and fry for 2 mins or more till ghee coats the rice and aroma starts coming.
  12. Add fried rice to cooker , mix once and instead of water measure 4 cups of mutton boiled water( if mutton water is not sufficient then add hot water ).Check for salt.
  13. Close the cooker and cook for 3 whistles.
  14. When pressure subsides open the cooker , add lemon juice , balance ghee and mix gently.
  15. Keep closed the vessel for 15 mins or more for the flavours to set well.
  16. After 15 mins , serve the spicy hot briyani with  Raita or with your favorite sidedish.
  17. I served with mutton pattice gravy and raita.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
