BEEF BRIYANI


Hi All,
I brought this beef from Kochi, There in LULU mall I saw a range of meat varieties and wanted to try something new so brought these beef pieces.
This is the first time Im cooking beef and it is similar to goat meat and I don’t even find any difference in taste too. Since im sure Im not going to cook beef much so I thought of making it as briyani.
The easy and yummy beef briyani recipe is as below,
COOKING TIME : 1 HOUR
SERVINGS : 5 members
INGREDIENTS :
Beef – 500 gms.
Zeera samba – 2 cups.
Onion – 2 nos (big).
Bay leaf – 1 no.
Star anise – 1 no.
Marati mokku – 2 (small).
Cardamom – 3 nos.
Stone flower – 1 small piece.
Mace – 1 small piece.
Pandan leaves – 1 no ( optional).
Ghee- 4 tsp.
Oil – 2 tsp.
Coriander leaves – 2 tblsp.
Mint leaves – 2 tblsp.
Briyani masala powder – 2 tsp
Lemon juice – 1 tsp.
TO GRIND :
Onion – 1 no ( big).
Dry red chillies – 5 nos.
Ginger  - 1 ½ “ piece.
Garlic – 10 pods.
Fennel seeds – 1 tsp.
Turmeric powder – ½ tsp.

METHOD :
1) Grind the grinding ingredients to fine paste.
 2) Heat oil+2 tsp ghee in cooker, add bay leaf, cardamom, stone flower, pandan leaves, mace and saute in very low flame till aroma raises.
3) Add onion and saute till dark golden brown.
 4) Add chopped tomatoes and saute till mushy, add ground masala and fry till raw smell leaves and oil leaves to side.
5) Add add coriander leaves, mint leaves ,saute for a minute , the add cleaned beef, salt , little water, briyani masala powder , close cooker and boil for 10 whistles.
6) When beef boils to soft, add cleaned rice, 4 cups water, close and cook for one whistle.
7) Empty the briyani to a wide vessel  and add balance ghee , lemon juice , mix and mix gently .
8) Close and let the briyani rest for 30 mins till the flavors set.
9)             Serve with your fav raita or gravy.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
