All,
I
made this icecream recently from Ms.Ruchi Mehta's cook book.I was
impressed by the easy ingredients and thought of give a try .The
ice-cream came very delicious with loads of nuts and fruits.Soon
after the icecream was made unfortunately our entire family got
affected by flu 😱we all were suffering from severe cold , cough and
fever so we didn't got chance to take the icecream out.
After
a week still we are not ok to have icecream so I thought of this
crazy idea to bake a cake out of the leftover icecream ( does I sound
crazy?)..Yes..I added a small amount of flour and butter and baked to
fruit and nut cake which tasted so yummy and everyone asked me the
recipe : ) voilaaa...
The
icecream recipe and my crazy cake recipe is as below,
INGREDIENTS:
Condensed
milk – 200 ml.
Egg
white – 1 no.
Icing
sugar – 1/2 cup.
Cardamom
– 3 nos.
Rose
water – 1 tsp.
Mixed
chopped nuts and fruits – 3/4 cup ( I used almonds , walnuts ,
raisins , apricots , cashews ).
METHOD
:
- In your food processor ( mixer ) beat condensed milk well till forthy.
- Then add egg white and beat for 30 seconds , followed by icing sugar and beat for few more mins till mixed well.
- Then empty the contents to a bowl and add chopped fruits and nuts , rose water and freeze them for an hour.
- After one hour remove from refrigerator , mix well and again refrigerate it for 8 hours or till set.
- Once done remove and enjoy.
FOR
LEFTOVER ICECREAM CAKE.
- Remove the icecream from refrigerator , let it come to room temperature.
- Add 40 gms of all purpose flour , 1 tsp baking powder ,40 gms of butter,4 drops of rose essence and mix well.
- Pre-heat oven to 180” C - 40 mins .
- Pour the batter in greased pan and bake for 40 mins or till toothpick comes out clean.
- Remove and let the cake cools down to room temperature.
- Enjoy icecream flavoured cake.
- I loved the cake more than icecream.
