ASOKA HALWA / MOONGDAL HALWA

தமிழில் காண : கிளிக்
Hi All,
Asoka Halwa!! Blogging after a very long time, I was in hectic schedule for past few weeks that I was not able to open by blog..After seeing my Dusherra post many was asking me about Asoka halwa recipe, so instead of typing for each one , I thought of taking little time and post it as post.
Asoka halwa is one of the easiest halwa you could make, if you have non-stick vessel then making halwa is more easier.
Recipe for simple, yummy Asoka Halwa recipe is as below,

INGREDIENTS :
Yellow moong dal- 2 cups.
Sugar- 3 1/2 cup.
Wheat flour- 1/2 cup ( otpional).
Ghee or refined oil- 2 1/2 cup.
Cashews – 1 tblsp ( chopped)
Cardamom- 5 nos ( powdered).
Food colour- few drops ( optional).

METHOD :
  1. In pressure cooker boil moongal with immerse level water for 3 whistles or till soft.
  2. Open cooker and mash the dal without lumps.
  3. Add sugar when moongdal is hot and mix till sugar dissolves.

  4. In a heavy bottom vessel add ghee or oil and add wheat flour.
  5. Fry till aroma generates from wheat flour. Now add cashews and fry for a minute.
  6. Then add moongdal sugar mixture, food colour, keep the flame in medium and keep stirring.
  7. Add cardamom powder and keep stirring for every 2 mins to prevent from bottom burning.
  8. After 30 to 45 mins, the halwa will thicken and oil will start oozing out.
  9. The halwa will not stick to vessel , when you stir it will roll into a mass with oil oozing out in sides of pan ( as in video).

  10. This is the right consistency, remove from flame and enjoy hot or cold as per your choice.
  11. The halwa stays good for 10 days.
NOTES :
  1. If you have non-stick pan , pls use it for easy and effortless halwa.
  2. Stirring is important , dont miss to stir for every 2 mins.
  3. Be generous in adding oil / ghee , I added 2 cups ghee and 1/2 cup oil.
  4. Food colour is optional , I added to get this bright colour.
  5. Also Wheat flour helps in bringing the consistency soon, you can even skip it.

    HAPPY COOKING!!

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have

When I was learning cooking my chapatis will be either crisp like disc or rubbery that you need to dentist after chewing😭 So I try so many versions to make my chapati perfect and this warm water method is one success method , This method is so easy that your chapatis will be very very soft and light. A few tricks to make your chapatis perfectly soft and puffy are , Add water little by little while kneading . Don't knead dough too dry , make slightly sticky dough so that while toasting it comes to perfect softness. The recipe of perfect soft chapati is below, COOKING TIME : 1 hour.
