COCONUT COOKIES

Hi All,
COCONUT COOKIES! I made this cookies two weeks before. We went to my home town and I want to bake something for my mum and dad with less sugar, yet yummy, so made this yummy, aromatic coconut cookies.
The cookies was so yummy,crunchy that it vanished in one day. My uncle gave me a compliment that the cookies tasted even better than our bakery brought ones.

The yummy,crunchy, easy coconut cookies recipe is as below,

COOKING TIME : 30 mins.
YIELDS : 20 cookies.

INGREDIENTS :
Maida / All purpose flour- 1 1/4 cup ( 175 gms)
Grated Coconut- 1/2 cup ( 40 gms) + 1/2 cup.
Butter- 1/4 cup (60 gms)
Salt- 1/4 tsp.
Sugar- 3/4 cup (120 gms).
Egg- 1
Vanilla essence- 1 tsp.
Baking powder- 1/4 tsp.


METHOD :
  1. Bring all the ingredients to room temperature.
  2. In a bowl add butter, sugar and beat till sugar mixes with butter evenly.
  3. Then add egg, vanilla essence and beat.
  4. When egg is mixed well with butter mixture, add 1/2 cup coconut and mix well ( no need to beat).
  5. Then add flour, salt, baking powder and knead to form a mass.
  6. Now make small balls from dough, roll it in balance coconut, place it on greased baking tray. Press slightly on top to make little flat.
  7. Pre-heat oven to 180” C @ 20 mins.
  8. Bake in preheated oven for 20 mins or till top turns to golden brown.
  9. Remove from oven, let it cool down to room temperature.
  10. Store in airtight container and enjoy for a week.
    NOTES :
  1. For soft cookies , bake at lower rack for 20 mins.
  2. For crispy cookies bake at lower rack for 15 mins and at upper rack for 10 mins.
    3. When hot the cookies will be very soft, when cooled down to room temperature it will turn crisp.
