VEG
NOODLES! I can say it is one of the easiest and healthiest noodles which
you can make in home.
I
make veg noodles very often and the main part is, you can add any vegs
of your choice and more the vegs quantity, the better the taste.
Simple,
delicious veg noodles recipe is as below,
COOKING

INGREDIENTS
:
Plain
noodles – 200 gms
Onion-
1 no.
Carrot, capsicum, garlic, green
peas, onion – 2 cups all together (add any vegs like
cabbage, beans, broccoli of your choice)
Coriander
leaves- 2 tsp
Tomato
sauce- 2 tsp
Soya
sauce- 1 tsp
Salt-
as per taste
Pepper-
1 tsp
Ghee/
Butter- 3 tsp.
Oil
– 1 tsp.
METHOD
:
- In a wide vessel boil water, when water reaches boiling temperature add noodles,1 tsp oil, 1tsp salt and switch off flame. Close the vessel and let the noodles remain in hot water till it cooks to soft but not mushy.
- You can cook noodles in above method or as per packet instructions.
- When noodles boiled to soft, drain the water and cool down with running cold water (this process will prevent noodles from overcooking and turning mushy).
- Chop vegs to thin lengthwise pieces (Julienne).
- Boil peas with salt and enough water, drain water and keep it aside till use.
- In a wide kadai heat ghee/butter, when ghee reaches smoking hot, add chopped vegs and fry in high flame till they becomes soft but still crunchy.
- Then add boiled peas and give a mix.
- Add soya sauce, tomato sauce and boil for 1 minute in medium flame.
- Add chopped coriander leaves and mix well till it shrinks a bit.
- Finally add boiled noodles, salt, pepper and mix gently in low or medium flame till everything mixes evenly.
- Remove from flame and serve hot with Manchurian or any dry sidedish of your choice.NOTES :
- Don't over cook noodles, 90% cooking is enough.
- If you have fear about noodles turning mushy, then after adding noodles to kadai, switch off the stove and gently mix the noodles using your hand. And when noodles mixes well with other ingredients, switch on the flame and heat for 1 minute.This way you can mix well without noodles turning mushy.HAPPY COOKING!!
