SOUTH INDIAN KUSKA (VIDEO AND TEXT RECIPE) - குஸ்க்கா

Hi All,
South Indian Kushka , which we cook often in home when we run out of vegs or for simple parties.
I served with Soya fry (recipe link here)
The simple trick of the aromatic kushka is soaking the spices.



Here is the simple recipe of easy , yummy, flavourful kushka,

INGREDIENTS :
Zeera rice or Basmathi rice – 1 1/4 cup.
Cloves – 2
Star Anise – 1
Marati mokku – 1
Cinnamon – 4
Bay leaf – 1
Onion – 2 nos.
Green chillies – 2 nos.
Chilli powder – 1 tsp.
Garam masala or Briyani Masala – 1 tsp.
Salt – as required.
Turmeric powder – 1/4 tsp.
Ghee – 2+ 1 tsp.
Lemon juice – 1 tsp.

Method :
Here is the simple video for your easy ref,
  1. Soak 1 bay leaf, cinnamon 2 pcs, cloves 3, star anise 1, marati mokku 1 in 1 cup water and refrigerate overnight or for 6 hours .
  2. Next day remove spices from water and keep it aside till use.
  3. Don't discard water we need it for soaking rice
  4. Wash 1 1/2 cup zeera rice or basmathi rice and soak in spices water for 1 hour.
  5. Heat 2 tblsp ghee in cooker
  6. Add soaked spices and saute in low flame
  7. Add chopped 2 green chillies ,add 2 chopped onions
  8. Add 2 tsp ginger garlic paste and saute till raw smell disappears
  9. Add turmeric powder 1/4 tsp, chilli powder 1 tsp, curry masala powder or briyani masala 1 tsp and saute for 1 minute
  10. Add soaked rice with water along with 1 cup of water, salt and mix
  11. Cook for 2 whistles
  12. When done open the cooker , add 1 tsp lemon juice ,ghee.
  13. Mix and serve.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
