SUN DRIED TOMATO PICKLE

Hi ,
Sun dried tomatoes are special during summer, only in summers we would able to make this . Though Iam  not much expert in this my mum makes it perfectly. the pickle stays fresh in shelf for about 3 months and if refrigerated it stays good even for 6 months.


Here is the awesome tomato pickle recipe .

INGREDIENTS :
Tomatoes - 1 kg.
Salt - 4 tsp.
Tamarind - guava sized.
Fenugreek - 1 tsp
Mustard - 2 tsp.
Cumin - 1 tsp.
Channa dal - 2 tsp.
Tur dal - 2 tsp.
Gingely oil - 5 tblsp.
Dry red chillies - 15 nos.

METHOD :
1) Wash and wipe tomatoes well.

2) Chop them roughly.

3) In a glass bowl add chopped tomatoes , salt and let it sit overnight.
4) Next morning the tomatoes will leave lot for water.
5) Squeeze tomato juice from tomatoes and spread in a wide plate.

6) Sun dry tomatoes and its juice in hot clear sun.
7) At end of the day fill the drying tomatoes in its juice itself and  keep overnight.
8) Next morning again repeat the process by squeezing and drying.
9) Repeat the process for next three days.
10) At third day add tamarind to tomato juice and dry it along with tomatoes. 

11) At end of the day , add dried tomatoes to tamarind soaked juice and mix well.
12) Let it sit overnight or for 8 hours. Then grind everything together.
13) Dry roast 1 tsp mustard, Fenugreek , Channa dal ,Tur dal, dry red chillies separately and grind to fine powder.  
14) Heat oil in kadai , add mustard and when it starts spluttering , remove from flame.
15) When oil cools down to luke warm , add the ground powders and mix well.
16) Let the mixture cool down completely .
17) Add the masala oil to ground tomatoes paste and mix.
18) Using dry spoon mix well and let it sit overnight.
19) Use it after 3 days.

NOTES: 
1) If untouched the pickle stays good even for 3 days in shelf.
2) Do not sun dry tomatoes for more than 3 days , 3 days works fine.
