I saw this bonda in
Chef Venkat Bhat’s program few months before , the way he explained was super tempting
and I pushed me to try it then and there. It was super hit and I make it once
in a while due to maida content. But iam sure it is an awesome snack to try during
rainy evenings.
The consistency of the perfect vada is based on your
handwork, beat the batter using your hands till puffy, the batter must be puffy
like air. The simple recipe is as below,
Cooking Time : 30 mins.
Servings : 5 members.
INGREDIENTS :
Maida – 250 gms
Thick curd – 150 gms
Salt – as required
Green chillies – 2 or 3
Pepper – 1 tsp
Cumin – 1 tsp
Curry leaves – few
Baking soda – a pinch (optional)
Ginger – 1” piece – 1
Asafoetida – 1/8 tsp.
Coriander leaves – a handful.
METHOD :
1) Mix Flour
with all other ingredients.
2) The
batter must be like thick idli batter, if required add more curd.
3) Close
the vessel and let it rest for 15 mins.
4) After
15 mins beat the batter with your fingers till pluffy (as in below video).
5) Heat oil , Make medium sized balls.
5) Fry in medium flame till the fritters fry to golden brown.
6) Remove
from heat and enjoy with bonda chutney, I served with Sago Payasam..
NOTES :
1) Beating
the batter to pluffy gives nice, pillow soft vadas.
2) Frying
in medium heat is important, else vadas will brown outer and inside remains
uncooked.
