CHENNAI STREET FOOD STYLE EGG MASALA OMELETTE

Hi,

Everyday in our home we talk so much about healthy , hygienic food but when we go out we forget about everything and get tempted by the spicy aroma and taste of hotel food :)) we convince ourself only once in a while know so nothing harm ( but we say this weekly twice :)))) .That's too the local street foods are amazing , I know very well how they make the dish and how harmful it is but still we love it for its taste.
In Chennai the local street food has some unique taste in some of their dishes such as fried rice , chats , parota salna and masala egg omelette .Everyday I make eggs in our home but still street food style omelette has some unique taste which I was unable to replicate. One day my friend Mrs. Saranya Sathish came to our home and she prepared this omelette for us,she made the omelette in the same way as like in street food. I immediately noted the recipe and from that day I make omelette in this method only.
Also when I pack egg omelette in lunch box for my husband he always reports that he gets some egg smell in afternoons but when I make omelette in this method there wont be any smell and also omelette remains fresh till noon.
The recipe is as below,

INGREDIENTS:
Egg – 2 nos
Onion – 1 big.
Green chillies – 2 nos.
Curry leaves – few (optional)
Coriander leaves – few
Salt – 1/4 teaspoon
Chilli powder - 1/2 tsp
Garam masala / Chicken masala – 1/2 tsp
Water – 1/8 cup.

PREPARATION:
1) Chop onions and green chillies into small pieces, same way cut coriander leaves and curry leaves also to tiny pieces.
2) Mix chilli powder, Masala powder and salt in water and keep it aside.
3) Heat tawa and drizzle one tsp if oil, add onions, green chillies, curry leaves and fry till transparent.
4) In the mean time in a bowl crack open the eggs and beat them well till frothy either with spoon or beater.
5) Add the masala mixed water to the egg and beat one more time till frothy.
6) Finally add sauted onions, green chillies, curry leaves and also chopped coriander leaves to the egg mixture and mix well.
7) Now in the same tawa heat one more tsp of oil and add the egg mixture and spread it by rotating the tawa.
8) Sprinkle few drops of oil and let the omelette boil in medium flame for 3 to 4 mins.
9) Flip the omelette to next side and boil for 2 more mins. When done remove from flame and serve hot as side dish for rice and also as snacks too.

NOTES:
1) You can even skip garam masala, its upto your choice.

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
