SOFT AND PUFFY CHAPATHIS

Hi All,
CHAPATHI!! Everyone knows chapathi preparation method , but some people like me doesn’t know the tricks in making proper soft chapathi J so this recipe with help them.
Actually I never got soft chapathi for long time…I always get confused why chapathis are not so soft L,Then I finally learned the secret behind it.The trick is in making the dough! The right amount of water and proper way of kneading the dough gives you the soft , puff chapathis.
Though my chapathis are soft but I can never make perfect round chapathis ( you can even see the funny shape of my chapathi in pictures J)

The recipe is below,
INGREDIENTS :
Wheat flour – 5 cups.
Salt – 1 tsp
Water – as required.
METHOD :
1) In a bowl add wheat flour ,salt and give a quick mix.

2) Add water little by little to the flour and knead well with hands.
3) Knead well till the flour forms to soft dough as like in the picture.

4) The dough must form a mass , it should not stick to the vessel.
5) Now make small balls out from the dough .

6) Flatten the balls to thin discs with roller and pin.

7) Heat tawa and place the flatten dough in the hot tawa and sprinkle two drops of oil over the tawa.

8) Once the chapathis changes its colour invert it .

9) Slightly press the chapathis with the spatula to make air circulate within the chapathis well and make it to swell well.

10)    Invert the chapathis four to five times till the chapathis are boiled well.

11)    Remove from tawa and serve hot.

NOTES :
1) Boiled chapathis must flow like a soft cloth , it should not be so stiff , so remove from heat at right consistency.

2) Always store prepared chapathis is closed boxes , don’t keep it in open air else they will lose its softness.
3) The quality of chapathis depend on your flour quality so always choose good quality wheat flour.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
