Sooji and Sugar powder |
2) Grind
Sugar to fine powder along with cardamom.
3) Boil
milk and keep it warm.
4) In a
wide kadai heat ghee and oil , Add cashews and raisins ,fry till
golden brown.
Make sure the cashews are not burnt,When done remove from heat and keep it
aside.
5) In the
same kadai add ground sooji and fry till you get nice aroma and sooji starts
turning its colour.
Can you see the colour of sooji powder has changed a little |
6) Now
without delay add sugar powder and give a quick mix till they mix well with
sooji and switch off the heat immediately.
Adding sugar powder |
7) After
adding sugar powder no need to fry for long time as sugar will start turning
sticky and also they will form lumps.
8) Add
the fried cashews ,raisins and mix well.
9) Now
add the warm milk little by little carefully and mix well till the mixture
forms a mass that you get a consistency of making balls out it.
Adding milk little by little |
Right consistency to make balls |
10)
Using your hand make balls out of it and keep it
aside,Let the balls rest for 10 mins to get dry and also the taste to blend
with each other.
This is the consistency from which you can make balls |
11)
That’s it !!! Gobble everything as you wish.
12)
You can store the ravaladoos for 3 days , and
refrigerate for 10 days.
NOTES :
1) While
frying sooji powder make sure you stir them continuously to prevent from
burning at the bottom.
2) After
adding sugar act fast to give a quick stir and remove from flame. If sugar forms to lumps no need to panic , mix well after adding milk , the lumps will dissolve in warm milk.
3) While
adding milk be careful not to add more milk then your ravaladoo will become
ravakesari J.
4) In
case if you added more milk keep the mixture aside for 10 mins so that it will
turn little dry as to make balls easily , also after making balls let them sit
for 10 more mins so that you can take them and reshape again, this way you can
get right consistency. But better add milk little by little to avoid such
tedious situation.
5) We like mild sweetness so I added 3/4 cup sugar , you can increase upto 1 cup sugar for 1 cup sooji according to your taste.
