GRILL CHICKEN



Hi Everyone,
Our family is full of Chicken lovers , right from kids to grown ups all are addict to chicken.
So once I brought Microoven I thought of preparing some chicken dishes in it but as Iam not familiar with Microoven using I hesitated to use it ,  then finally I gathered my guts and prepared this grill chicken.
While grilling my entire house was filled with some fast food hotel style tempting aroma but still I was not sure about the taste ..But at the end it ended like fairy tales “ Happy ending !!”.
The taste was awesome , spicy and exactly how we eat in hotels.Also it consumes very less oil so it is healthy too.
I immediately bookmarked the recipe and Iam really very excited to share the recipe with you all.

Here is the recipe,

INGREDIENTS :

Chicken – 1 full chicken divided into 4 pcs ( 2 legs and breast sliced as 2 pcs).

FOR FIRST MARINATION :

Turmeric powder             –   1/2 tsp
Red chilli powder             -    3 tsp
Lemon                             -    1 no
Salt                                  -   as required.


FOR SECOND MARINATION :

Ginger  3” piece              -   1
Garlic                              -   10 to 12 pods
Curd                                -   3/4 cup
Cumin                             -   2 tsp.
Pepper                            -   1 tsp
Garam Masala                -   4 tsp
Kasoori methi                  -   1 tsp
Oil                                    -   2 tsp.

PREPARATION :

1) Wash the chicken pieces with water really really well , as the chicken pieces are in bigger size we need to clean it very well .

2) Slit the chicken pieces at various places and pierce holes at many places .

3) Grind Ginger , garlic , cumin , pepper into fine paste.

4) Now marinate the chicken with first margination ingredients turmeric powder , chilli powder , salt and lemon juice and leave it for 1 hour.
6) In the mean time in a bowl mix curd , ginger garlic pepper and cumin paste , kasoori methi ,garam masala, oil to fine puree.

5) After 1 hour marinate the chicken with the second marination puree. kasoori methi and oil , Refrigerate the marinated chicken in fridge for overnight (atleast for 5 hours).

6) After setting for minimum 5 hours take the chicken out of refrigerator and bring it to room temperature.

7) Preheat the oven in grill mode to 200”C for 30 mins .

8)  Mix 2 tsp of butter or oil with one tsp of chilli powder in a bowl and keep it ready.

9)  Place the chicken in grill pan and place it in the lower rack (or as per your oven insturctions ) and press start.

10) For every 10 mins open the oven door, pull the tray and invert the chicken pcs to next side and brush some chilli mixed butter over the chicken and push the tray into oven again and press start.Do this step for every 10 mins.(I forgot to take pictures of brushing oil sorry!)


11) After 30 mins you can see the chicken has turned its colour to brown and look cooked.

12) Remove from oven and squeeze some lemon juice over the chicken and  garnish with coriander leaves , tomato and onions and serve hot.


NOTES :

1) Slit the chicken well before marinating , In case of breast pcs pls beat the chicken with some hard metal to make chicken soft and tender , Also while marinating insert the masala into all the gaps well ,else after grilling the inner part of chicken will remain plain.
2) Don’t over cook the chicken , the cooking time may vary from oven from oven so keep an eye.
3) The chilli oil is used to give glossy nice colour and spicy taste to chicken it you don’t want chicken to be too spicy hot you can just brush with plain butter or oil.
4) I suggest butter as I don't like the smell of oil after grilling , butter gives a nice rich aroma but choice is yours.
5) Place a tray under your grill wire as the masala will melt and drop down into drops during grilling.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
