MASALA BUTTERMILK


Hi Everyone,
When I was working one of my north Indian friend use to prepare this masala butter milk to us in office and we will be always surprised how this buttermilk tastes very different and also yummy.Finally we got the recipe before relieving from job.There is no big secret in it just cumin powder and chat masala are the secret ingredients. And I made it in our South Indian way J
The below is the recipe for you,


INGREDIENTS :
Curd                      1 cup.
Water                    ¾ cup
Green Chillies     – 1 or 2 nos
Curry leaves        – a sprig
Coriander leaves – a bunch
Ginger                  – 1” piece
Salt                       – as required.
Chat masala         –less than ¼ tsp (one or two pinches is enough)
Cumin   / Zeera     – ½ tsp.
PREPARATION :
1)  The recipe is like our traditional buttermilk only but with little changes.
2) Dry roast cumin in a pan and grind to fine powder.



3) Crush green chillies , curry leaves , coriander leaves , ginger slightly ( don’t grind it to paste , crushing is enough).

CRUSHED INGREDIENTS


4) Add water and Curd in blender and blend till the mixture becomes forthy.You can see the butter floating on the top of the butter milk in that case remove the butter (Incase of packet milk you will not get any butter J)
5) Once done pour the buttermilk in a cup,add the crushed ingredients , salt, cumin powder ,chat masala and mix once and refrigerate it for 1 hour or more.

6) After refrigeration filter the buttermilk and pour in your serving glass ,sprinkle a pinch of chat masala and serve chilled.
NOTES :
1) I used my pestle and motor to crush the ingredients, you can use your blender but crush only once.
2) If your curd is too thick you can add more water as per your requirement.
3) Be generous in adding curry leaves, coriander leaves it gives a nice flavor.
4) The more time you soak the masala the higher the tastier your buttermilk will be.
5) Don’t add too much of chat masala as it will dominate your actual buttermilk taste.
