Hi All,
Briyani!!! We love anything with name Briyani.Whenever Iam in short of time but
still needs to make spicy briyani I make this simple Mushroom briyani as it needs no grinding and no marinating ,
just saute all spices ,add mushroom ,rice , boil and serve.
This briyani is great for packing lunch as it has mild
taste and rich aroma which makes the briyani very flavourable.Also as there is
no grinding masala added the fear of mushy briyani can also be avoided.
The recipe is also below,
INGREDIENTS :
Zeerasamba rice – 2 ¼ cups.
Onions – 1 no ( big)
Tomato – 1 no ( medium sized)
Cinnamon / Pattai -
4 pcs (about ½” sized)
Cloves / Krambu – 8 pcs.
Star anise – 1 no.
Nutmeg powder – a pinch.
Annachi mokku – 3 nos.
Bay leaf – 1 ½ pc.
Ginger 2” piece – 1 no.
Garlic – 7 pods.
Curd - ¼ cup
Briyani masala – 2 tsp
Coriander powder – 1 tsp.
Chilli powder - 1
tsp.
Turmeric powder - ¼
tsp.
Coriander leaves – a bunch
Mint leaves – a bunch.
Oil / Ghee – 5 tsp.
Green chillies – 2 nos.
Lemon juice – 1 tsp.
PREPARATION:
1)Wash
and soak rice for 30 minutes.
2)Chop
Onions , Tomatoes , Ginger , garlic to
small pieces.Slit green chillies.
3)Wash
and wipe the mushrooms , cut them into four pieces.
4)Heat
pressure cooker and add 4 tsp ghee / oil, when oil gets heated add your whole
spices (Bay leaf , Annachi mokku , Cinnamon , Cloves , Star anise ) and saute
in low flame.
5)When
spices are sauteed to golden brown add chopped ginger ,garlic and fry till raw
smell of ginger leaves the pan.
6)Then
add green chilies and onions and fry till golden brown , followed by tomatoes
and saute till mushy.
7)When
everything is fried add the spice powders – Turmeric powder , chilli powder ,
coriander powder , Briyani masala, coriander leaves , mint leaves mix well to
blend with each other.
8)When
done add mushroom and fry in medium heat for 5 mins , add rice , 3 ½ cups water
, salt and mix well.
9)Close
the cooker and boil for one whistle,switchoff the flame.
10)
Let the steam subsides all by its own (it takes
about 20 mins).
11)
Open the cooker and 1 tsp ghee , lemon juice
and mix gently.
12)
Serve hot with your favorite raita or curry of
your choice.
NOTES :
1)You
can replace Briyani masala with curry masala or garam masala , but I insist
Briyani masala.
2)As I don’t
have mint leaves and coriander leaves I didn’t add so in pictures those will be
missing.
3) You can replace zeerasamba rice to Basmathi rice also.Water ratio for both the rices are same 1:1.5 ( i cup rice to 1.5 cup water).You can increase the water level upto 2 cups based on age of rice.
