CHICKEN SAMOSA

Hi,
CHICKEN SAMOSA !! We love anything with the name chicken :) But chicken samosa which we are getting from bakery is a disappointment for me 1st reason is it has only very little quantity of chicken in it ( I have to search where is chicken in samosa) 2nd reason is Iam getting some sort of odor in that chicken ,it is may be they are using preserved chicken and not fresh chicken . My husband advises why you are experimenting so much in a twenty rupee samosa!!
But somehow Iam not happy with bakery brought chicken samosas.

I brought a packet of samosa sheets few days before from Niligris ..Actually I brought this by mistake thinking as puff sheets :(.After coming home only I noticed these are samosa sheets but why to worry if not puffs I can make samosas :).I made chicken samosas and I say these are perfect chicken samosas , I served it as evening snack for my sister's family and everyone was impressed.
I say these are far far better than bakery brought.

You try atleast once then definitely you will not go for bakery for chicken samosa.

The recipe is as below,

SERVINGS : 10 SAMOSAS

INGREDIENTS :
Chicken – 2 cups( boneless , shredded chicken).
Turmeric powder – 1/2 tsp.
Chilli powder – 2 tsp.
Coriander powder – 1/2 tsp.
Salt -as required.
Chicken masala – 1 tsp.
Onion – 1 no ( big).
Tomatoes – 2 nos ( medium sized).
Coriander leaves – a bunch
Ginger garlic paste – 1 tsp.
Egg – 1 no.
Lemon juice – 1 tsp.
Oil – 2 tsp.
Samosa sheets – 10 sheets.
Oil – for deep frying.


PREPARATION :

  1. Wash and clean chicken with running water well and marinate with turmeric powder, 1 tsp chilli powder , salt for half an hour.
  2. In the mean time chop onions , tomatoes , coriander leaves to small pieces.
  3. Beat the egg and keep it aside till use.
  4. Boil chicken with little water till they turn tender and soft ( add little water as chicken itself has water in it) and water dries completely.


  5. In a wide kadai heat 2 tsp oil , followed by onions , ginger garlic paste and saute till raw smell of ginger garlic leaves and onions turns brown.


  6. Now add tomatoes and fry till mushy . Now its time to add your spice powders, add chilli powder , coriander powder , chicken masala and fry in low flame till they mix well.
  7. Add boiled chicken pieces and mix well , close the pan and boil in medium flame for 5 mins till the masala blends with chicken pieces.
     
  8. Garnish with coriander leaves and remove from flame.
  9. Finally add lemon juice and mix once.
  10. Take each samosa sheets and fold from one edge as like in picture.After two folds you will get a cup shape space for filling(pls see below the pictures for how to fold).
  11. Fill the space with 1 tsp chicken , rub the edges with egg wash and seal the samosa edges.
  12. Heat oil in wide pan and drop the samosas gently and deep fry till brown in medium flame.
  13. Drain the oil and serve hot with your favorite dip.

NOTES :
  1. Try to buy shredded chicken , if not then remove the bones and chop them to small pieces.
  2. Also chop onions and tomatoes to as much as small pieces.
  3. I used whole wheat samosa sheets , if you could not buy it you can even make in home with wheat flour or all purpose flour ( maida) . Mix flour with 2 tsp of oil , salt and little water and make it into soft dough.Let the dough rest for 1 hour.Then using your roller and pin applying oil roll them into sheets of required size and fill the fillings.

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
