VARUTHA PORI / FRIED PUFFED RICE

Hi ,
FRIED PUFFED RICE! This is a common snack in my mum's home.My dad needs something to munch in evenings.Being a Diabetic patient considering diet , sugar levels etc etc my mum will not make snacks everyday.In such times this fried puffed rice helps in handy.Her pantry will always have a jar full of puffed rice she will fry them and store in airtight container in batches.
Puffed rice is very filling and a easy snack.You can make many yummy snacks using puffed rice and this is one of the easiest snack that you can make in 5 minutes and serve hot.

The recipe is as below,

INGREDIENTS :
Puffed rice – 100 gms ( appx 4 cups).
Groundnut – 1 cup.
Curry leaves – 2 sprigs.
Sun dried chillies / mor milagai– 5 pcs.
Roasted gram dal / Pottukadalai – 1 cup.
Mustard / Kadugu – 2 tsp.
Turmeric powder – 1/2 tsp.
Cumin / Zeera – 1 tsp.
Garlic – 5 pods.
Coconut oil – 10 tsps.


METHOD : 
  1. Heat coconut oil in a wide kadai , followed by mustard , Cumin and when cumin starts cracking add sundried chillies , garlic , curry leaves and saute in medium flame till garlic turns its colour.

  2. Now add groundnut and fry for a minute followed by roasted gram dal , turmeric powder and finally add puffed rice.Keep mixing till the rice puffs mixes with all ingredients and gets warm.
  3. When you bite a puffed rice it must be very crispy , at this stage remove from heat and serve hot.
  4. After adding puffed rice keep stirring as puffed rice will burn quickly at bottom .Also fry only at medium flame.
  5. Be lavish in adding curry leaves and garlic as both gives great flavor and aroma.
  6. Coconut oil is best for frying ,you can even replace it with refined oil too.
