BASBOUSA / SOOJI CAKE WITH HONEY

BASBOUSA !! Does the name sounds different ? But the ingredients are very simple and you can get from your pantry itself.
This is an Egyptian dish with healthy ingredients .The sooji cake dazzled with sweet syrup and chilled gives amazing taste .I never thought healthy baking would taste so yummy :)
Actual recipe says almond garnishing but I changed it to cherries and also instead of sugar syrup I used honey to drizzle over the cake , you can use sugar syrup also.
I got this recipe from ianchrispassionatecooking.blogspot.in , I didn't change any ratios I just followed the ratios as per her recipe and it came out very well and we all loved it.

The recipe is as below,

INGREDIENTS :
Samolina / Sooji – 1 cup.
Yogurt – 1/4 cup ( i used normal curd).
Butter – 1/4 cup.
Coconut grated – 1/4 cup.
Sugar – 1/2 cup.
Vanilla essence – 1 tsp.
Salt – a pinch.
Baking powder – 1/2 tsp.
Honey – 1/4 cup.
Lemon juice – 1/4 tsp.
Rose essence – 1tsp.

METHOD :

1) In a bowl mix sooji , yogurt , butter , coconut , sugar ,vanilla essence , salt , vanilla essence,baking powder and mix well.

  1. In a greased pan ( grease with butter ) add the mixture and spread evenly.

  2. Make cuts using knife , and garnish with cherries on each piece.

  3. Pre-heat oven @ 180”C for 30 mins.
  4. Refrigerate the basbousa mixture pan for 30 mins and then bake it in oven for 30 mins or till the edges turn brown.
  5. Mix honey with lemon juice , rose essence and keep aside.
  6. When basbousa bakes to brown edges remove from oven and drizzle honey mix over the basbousa.

  7. Slice them and enjoy.
  8. Basbousa tasted yummy when refrigerated.
  9. Instead of honey you can use sugar syrup also , also I added lemon juice very little as we did not like the tangy taste in cake , you can even skip lemon juice too.
  10. You can replace cherries with peeled almonds too.
