SWEET BANANA FRITTERS / PAZHA VADAI

Hi Everyone,

PazhaVadai / Banana fritters ( sweet) – Many viewers ask me what to do with over ripe Bananas, Iam surprised how they don't know about Banana fritters , I was thinking everyone know about this snack !! Bcoz everyone in my home town makes this snack often . Basically Pollachi is farming based town so banana plants is common in all farm lands and even in houses! Most of the houses has atleast small space either in front or back for gardening so Banana , drumstick and green leaves are few plants that are essential in each house.When we have our own banana plant we get a complete cluster of bananas one at a time and however we eat it finally atleast a dozen of bananas will over ripe and cannot be eaten.My mum use to make sweet banana puree ( abiseham – mashed banana with sugar and ghee) and also pazha vadai ( banana fritters) with those ripe bananas.
The hot fritters with fried puff rice are amazing combination for evening snack which can be made in jiffy! I love them when hot but I love it more next day:) ,Next day the fritters become so soft inside and the taste blends with each other very well.
So without wasting further time here below the recipe ,
The ingredients are so simple that you no need to run to stores to buy anything extra.

INGREDIENTS :
Super ripe bananas – 2 nos ( medium sized).
Sugar – 1/2 cup
All purpose flour / Maida – 1/2 cup.
Sooji / White Rava – 1 tsp
Oil – for deep frying.


PREPARATION :
  1. In a bowl peel and mash the bananas well without any lumps to gravy consistency.
  2. Then add sugar , maida , sooji and mix well till all the ingredients incorporate with each other well.
  3. Heat oil in a wide pan and using your hand take a handfull of banana batter and drop it in oil as small balls.
  4. Fry till dark golden brown in medium flame.Drain the oil and serve .
  5. Thats all!! So easy know..try it in home n enjoy.

NOTES:
  1. The batter consistency must be as like in picture , too runny will observe more oil and too much stiff will make fritters too hard so adjust maida quantity accordingly.
  2. Use fully ripen very soft bananas for best result.
  3. Do not heat oil to piping hot, very hot oil burns the fritters outside but center part will remain uncooked.
  4. When refrigerated you can enjoy upto 4 days,even without refrigeration it remains well for 2 days.
