BRINJAL RICE

Hi,
BRINJAL RICE! This rice is one of the dish which I make to hide brinjals in our lunch😊
As I told you earlier my husband does 
not eat brinjals ,so in order to add brinjals in his diet I often make this rice which is so yummy that he cannot avoid.
Simple , yummy brinjal rice recipe is as below,

COOKING TIME : 20 mins.
SERVINGS : 3 members

INGREDIENTS :
Brinjals – 10 nos ( small or medium sized).
Rice – 1 cup.
Oil / ghee – 1 1/2 tsp
Mustard – 1/2 tsp.
Channa dal – 1 tsp.
Curry leaves – a sprig.
Turmeric powder – 1/8 tsp.
Lemon juice – 1/2 tsp.
Salt – as per taste.

TO DRY ROAST AND GRIND :
Cumin – 1 tsp.
Coriander seeds – 1 tsp.
Dry red chillies – 3
Poppy seeds – 1/4 tsp.
Channa dal – 1/2 tsp
Urad dal – 1/2 tsp.
Coconut – 1 tsp.
Cinnamon – 1” piece – 1 no.
Marathi mokku - 1
Cloves – 2
Asafoetida – a pinch
Ghee / oil – 1 tsp


METHOD :
  1. Cook rice with enough water, spread it on a wide vessel, add 1 tsp ghee and plough with fork. Keep it aside till use.
  2. Dry roast dry red chillies, cumin, coriander seeds, cloves, marathi mokku, cinnamon and remove it to a plate.
  3. In the same kadai heat 1 tsp oil and add channa dal, urad dal, poppy seeds, sesame seeds, coconut, asafoetida and fry in low flame till golden brown and remove it to the same plate.
  4. Grind both the dry roasted ingredients and oil fried ingredients to fine powder.
  5. Wash and wipe brinjal well without water, chop them to medium sized pieces.
  6. Heat oil in a wide kadai and add mustard, when mustard starts spluttering add channa dal, curry leaves ans saute till aroma.
  7. Then add chopped brinjals, turmeric powder, salt and cook till brinjals cooked to soft.
  8. Finally add ground powder, cooked rice, mix for 5 more minutes.
  9. Then check for salt,add lemon juice, mix once and remove from flame.Serve hot with papad.
