WHEAT ROTI

Hi,
WHEAT ROTI! My mum makes this roti often, Wheat roti helps to reduce diabetics.
Whenever she makes this roti for her diet, before she eats, me and my sister grab the rotis first😄
After marriage I want to make such type of rotis but only after many trials I learnt to make it perfectly, I use butter paper to flatten the rotis. My mum does not use banana leaf or butter paper, she directly place the dough in hot pan and using hands she quickly flatten it 😊😊.
But I was not able to do so, before I flatten it properly it becomes hot and burns my finger😨
So finally I got this trick of using greased butter paper or banana leaf, by this method we get thin, evenly spread and most importantly soft...soft roti.
COOKING TIME : 45 mins.
SERVINGS : 20 rotis.

INGREDIENTS :
Wheat flour- 2 cups
Ghee- 2 tsp
Salt- as per salt
Water- as required.
Carrot- 4 tsp
Onions- 1 big
Green chillies- 2 nos.
Curry leaves- 2 tsp
Coriander leaves- 2 tsp
Mustard- 1/4 tsp.
Chilli powder- 1 tsp.


METHOD :
  1. Chop onions, green chillies, curry leaves, coriander leaves to small pieces. Grate carrot finely.
  2. Heat ghee in a wide kadai, add mustard, when mustard starts spluttering add green chillies and saute till it turns to pale color.
  3. Then add chopped onions, curry leaves and saute till translucent, followed by carrot and saute till raw smell leaves.When done switch off the flame and let them come down to room temperature.
  4. In a bowl add wheat flour,salt, chilli powder and mix well.
  5. Make a well in middle and add water, knead well to form sticky dough(as in picture).
  6. Then add sauteed ingredients and mix well.
  7. Heat tawa and spread few drops of ghee.
  8. Spread a drop of ghee on butter paper or banana leaf(I used butter paper), place a ball sized dough on greased butter paper.
  9. Wet your fingers with oil and start spreading the dough to thin roti.
  10. When done, invert the roti along with butter paper to hot tawa ( refer picture).
  11. When roti starts changing the colour, just peel the butter paper(Butter paper will not peel from roti before roti changes its colour)
  12. Sprinkle a drop of ghee over the roasting roti and flip the roti to next side.
  13. Increase the flame to high and let the roti boil till slight brown.
  14. Flip the rotis twice and remove from flame and serve hot with your favorite chutney.
  15. I served with onion chutney, more than sambar and gravy the roti goes great with karachutney and onion chutney.
    NOTE:
    1) You can even flatten the roti directly in tawa itself, but you need little experience to make it perfectly (as in picture). 
    2) But I feel flatten it in butter paper or banana leaf is easy and light.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
