CAULIFLOWER FRIED VEGS

Hi All,
CAULIFLOWER FRIED VEGS! I made this fried vegs for my lunch based on fried rice recipe.
Whenever I make fried rice to my family , I will make my paleo fried vegs from their vegs itself.
The simple , delicious and healthy fried vegs recipe is as below,

COOKING TIME : 30 mins.
SERVINGS : 2
INGREDIENTS:
Cauliflower florets –4 cup
Carrot – 1/2 cup.
Cabbage – 1/2 cup.
Capsicum – 1 no ( medium sized).
Onions – 1
Pepper - 1tsp
Tomato ketchup – 1 tsp.
Soya sauce – 1/2 tsp.
Coriander leaves – 5 tsp.
Curry leaves – few
Salt – as required.
Butter / ghee – 6 tsp.

TO MARINATE WITH CAULIFLOWER:
Turmeric powder – 1/4 tsp.
Chilli powder – 2 tsp
Garam masala – 1 tsp.
Coriander powder – 1 tsp.
Ginger garlic paste – 1 tsp.
Curd – 2 tsp.
Salt – 1 tsp.


METHOD :
  1. Cut cauliflower to small size florets .Boil 10 cups of water in a wide vessel , when water reaches boiling temperature add cauliflower and boil for 5 mins till cauliflower boiled to soft but little crunchy.
  2. Strain the hot water , run with cold water once ( this is to prevent cauliflower from over cooking).
  3. Drain water completely ,marinate cauliflower with salt , chilli powder , garam masala , coriander powder , ginger garlic paste , curd and let it sit for 30 mins.
  4. Chop carrot , carrot ,capsicum to thin lengthwise stripes.Chop onion finely.
  5. Heat 3 tsp butter in a wide kadai and add marinated cauliflower and fry in high heat till cauliflower roasts to dark brown , remove them to a plate.
  6. In the same kadai add balance Butter / ghee and when butter reaches smoking hot add chopped onions ,vegs,curry leaves and fry till vegs shrinks in size and turns to golden brown (the vegs must be cooked 90% ,and will be little crunchy).
  7. Now add soya sauce , tomato ketchup ,salt and saute for a minute.Then add fried cauliflower and give a quick mix.
    8.If needed heat 1 tsp butter in a wide pan, crack open a egg,add salt,pepper,fry till dry and add it to frying vegs.Give a quick mix and serve hot.
     

    9.Enjoy as it is or with omlette.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
