2 INGREDIENT PINEAPPLE SCRAP JAM

Hi All,
PINEAPPLE SCRAP JAM! My daughter loves Pineapple. But for her we need to scrap the pineapple a little bit more to avoid the scrap hurting her tongue.
So what to do with the leftover scrap with lot of flesh? Made this easy, no preservative, quick pineapple jam.

I did not add gelatin or agar agar, if you want exactly like store brought jelly type jam, you can add a tsp of agar agar while cooking.
Simple, healthy, pineapple jam recipe is below,

COOKING TIME : 30 mins.
SERVINGS : 6 bread slices.

INGREDIENTS :
Pineapple scrap – 2 cup
Sugar- 4 tsp
Water- 2 cups.


METHOD :
  1. Wash the pineapple scrap in running water once to remove impurities.
  2. In a pot boil water along with pineapple scrap in medium flame for 20 mins or more till the water reduces to 1/4 quantity.
  3. When done , remove the scrap and discard it.
  4. In the remaining pineapple water, add sugar and keep boiling till the mixture turns little thick. Just one step before one string consistency is fine ( as in picture).
  5. When the mixture starts boiling the bubbles will be fast, as time goes on the bubbles will be slow and thick.This is the right consistency.
  6. At this stage remove from flame and let it come down to room temperature.
  7. Store in jar and refrigerate.
  8. The jam stays good even for a week when refrigerated.
  9. Enjoy with bread, Dosa and rotis too.
