DOMINOS GARLIC CHEESE BREAD WITH WHEAT FLOUR

Hi,
Recently my little one is showing interest in eating breads varieties. But whenever I feed her with bread I always have a guilt of feeding her maida. So now Iam trying to bake with wheat flour and other healthy flours replacing maida.
She loves Domino's Garlic bread/ sticks, so I have made this garlic bread with maida but now I want to make it healthy so tried with Wheat flour. Believe me there is no much difference in taste and texture from maida to wheat flour, you no need to compromise in taste due to wheat.
May be the texture is very slightly different from that of maida garlic bread but it is absolutely yummy.

Recipe for yummy, healthy Dominos style garlic cheese bread/ sticks is below,
PREPARATION TIME : 2 1/2 hours
COOKING TIME : 20 mins.
SERVINGS : 2 members.
INGREDIENTS :
Wheat flour- 1 cup + 3 tsp for dusting
Warm milk- 1/2 cup.
Active dry yeast- 1 tsp.
Sugar- 1 tsp.
Salt- 1/2 tsp.
Garlic- 2 tsp ( finely chopped).
Oregano/ pizza toppings- 1 tsp.
Butter- 3 tsp ( softened).
FOR BREAD SPREAD :
Melted Butter- 1/4 cup.
Garlic- 2 tsp (chopped).
Coriander leaves- 3 tsp finely chopped.
Mozzarella cheese- 1/2 cup.
Chilli flakes- 2 tsp.
Oregano/ pizza toppings- 2 tsp.
METHOD :
  1. In a bowl add warm milk, yeast, sugar, mix well and let it sit in warm place for 10 minutes to activate.

  2. After 10 mins you can see the mixture turned frothy with bubbles.
  3. With the activated yeast add flour, garlic,salt, oregano, 1 tsp butter and mix well.

  4. When mixed start kneading for 10-15 mins.The final dough will be soft and will not stick to the bowl.

  5. Now add balance 2 tsp butter to dough and knead again till butter incorporates with dough well.
  6. Tuck the dough and close the bowl, let the dough rest in warm place for 2 hours to raise.
  7. After 2 hours ,the dough must have raised to double the size.
  8. Punch the dough and knead for 5 mins in flour dusted surface.

  9. When done tuck the dough and flatten it using roller to medium thick disc.

  10. In a small bowl mix melted butter with garlic, coriander leaves and mix well.
  11. Now using brush, spread the butter mix over the flattened dough evenly.
  12. Sprinkle chilli flakes, pizza toppings evenly.
  13. Grate cheese on one side of dough, sprinkle some pizza toppings, chilli flakes and fold the dough from other side ( as in picture).



  14. Press the edges to seal them properly.

  15. Now again brush with butter mixture, sprinkle chilli flakes, pizza toppings and using knife make slits for every 2".

  16. Preheat oven to 180”C 20 mins.
  17. Bake in preheated oven for 20 mins or till the top turns golden brown.
  18. When done remove from oven, slice and enjoy with ketchup or mayonnaise.
NOTES :
  1. Wheat flour can be replaced with maida too, in that case reduce the milk to 1/4 cup.
  2. Kneading is important for soft bread so knead for minimum 10 mins.
  3. Be generous in adding garlic, chilli flakes, oregano or pizza toppings.
