KARANDI EGG OMLETTE / PUFFY OMLETTE

Hi,
KARANDI OMLETTE! Though in any version of omlette the basic method is same, the taste varies from each version and each variety of omlette has unique texture and flavor.
I love this karandi omlette, I searched and brought this tawa exclusively for making karandi.
You can make in any shallow small pan or non-stick small pan too.
The simple, delicious karandi omlette recipe is as below,

COOKING TIME : 15 mins.
SERVINGS : 3 mmebers
 
INGREDIENTS :
Eggs- 2 nos.
Onion- 1 no
Green chillies- 1 no.
Capsicum- 1/2 no ( optional).
Tomato- 1/2 no.
Salt- 1/2 tsp
Garam masala- 1/2 tsp.
Pepper- 1 tsp
Turmeric powder- 1/8 tsp.
Ghee/ butter- 2 tsp

PREPARATION :
  1. Chop the vegs to small pieces.
  2. Heat 1 tsp ghee or butter in a small kadai and add the chopped vegs, saute in medium flame till vegs fries to soft.
  3. Crack open eggs to a blender, add garam masala, pepper, turmeric powder, salt and beat at high speed till bubble forms. You can use hand blender or even fork to beat the eggs.

  4. Now add fried vegs and beat just once to mix evenly.
  5. Heat karandi kadai and spread with ghee/ butter, pour the egg mixture to half of pan ( as egg rises well during boiling, half is enough) and boil in medium heat till edges turn golden brown.
  6. Now carefully flip the omelette to next side and boil for 3 more mins.

  7. If you are not able to flip it , then invert the kadai to a plate and transfer the inverted omelette again to kadai. By this method you can flip the egg easily without breaking.

  8. When done remove to plate, same way make omelettes with entire mixture.
  9. Serve hot as snack or as side dish.
NOTE :
1) You can any vegs of your choice , adding coriander leaves and curry leaves will give you extra flavor.
