SHRIKAND

Hi All,
SHRIKAND! Shrikand is an amazing dessert made from hung curd which is very popular in Northern part of India.
Last week I saw a big bowl of curd lying in my refrigerator and as the climate was too cold no one is ready to have curd.So I made this amazing shrikand with the curd and it was awesome.

The simple, vitamin rich shrikand recipe is as below,

PREAPRATION TIME: 6 HOURS.
SERVINGS: 1 MEMBER

INGREDIENTS :
Curd- 2 cups.
Saffron- a pinch
Cardamom powder- 1/2 tsp
Sugar- 1/4 cup ( powdered).
Nuts chopped- 3 tbsp.

METHOD :
  1. Strain the curd using a muslin cloth or thick cotton cloth to drain the water.
  2. Keep the cloth folded in a strainer and place a heavy object on top ( this done to ensure all the water content drains from curd).
  3. Keep the strainer in refrigerator for 6 hours to prevent curd from turning sour.
  4. Soak saffron in warm water for 10 mins.
  5. Then remove the thick paste like curd from cloth to a bowl, add sugar powder, saffron, cardamom powder and whisk well till smooth.
  6. When shrikand comes to creamy texture, stop whisking and add in serving bowl.
  7. Garnish with nuts and refrigerate for 2 hours.
  8. Enjoy cool, healthy shrikand.
