Hi,
We
loved the flavor and richness of red velvet cake which I baked for
valentine's day.
And
when I saw this recipe in FB from Munch, crunch and slurp. I
desperately wanted to try this cookies.
As
more than soft cookies we love crunchy biscuits so made few changes
in recipe to make it like crunchy, thin biscuits.The result was as
expected very yummy and fantastic.

PREPARATION
TIME: 3 hours
COOKING
TIME : 20 mins.
YIELDS:
40 cookies.
INGREDIENTS:
Maida/
All purpose flour- 1 1/2 cup
Cocoa
powder- 1/8 cup.
Baking
powder- 1 tsp.
Baking
soda- 1/8 tsp.
Salt-
1/4 tsp.
Softened
butter- 1/4 cup.
Sugar-
1 cup.
Egg-
2 nos.
Buttermilk-
1 tablespoon.
Vanilla
essence- 1 tsp.
Vinegar-
1 tsp.
Red
food colour- 3 tsp.
Chocolate
chips or chopped dark compound- 1/2 cup.
Sugar
cinnamon powder- 1 cup (grind 3/4 cup sugar with 3 pcs of cinnamon).

METHOD
:
- In a bowl add flour, cocoa powder, baking powder, baking soda, salt and mix well for a minute.
- In another bowl add butter, sugar and beat till sugar mixes with butter well.
- Now add one egg at a time and beat well till frothy.
- When both the eggs are added and beated well, add buttermilk, vanilla, vinegar and food color. Beat well.
- Add flour mix and mix till combined.
- Finally add chocolate chips and mix.
- Cover the dough and refrigerate for 3 hours or till the dough becomes firm to make balls.
- After sufficient refrigeration,using greased hands make small balls out of dough, roll in sugar cinnamon powder and place on greased baking tray.
- Slightly press the balls on top to make little flat.
- Preheat oven to 170”C to 20 mins.
- Bake the cookies in preheated oven for 15-20 mins.
- When cookies turn crisp at edge, remove from oven and let it cool down a bit.
- Enjoy, crispy, yummy, colourful red velvet cookies with a scoop of ice cream.
NOTES
:
- Chocolate chips can be replaced with white chocolate too.
- If you want soft cookies, then make denser balls and bake at 170” C for 12-15 mins in lower rack.
- As we love crispy, thin cookies, I pressed them a little flat and baked at upper rack for 20 mins.
- Baking
time may vary from oven to oven.
