EGG RINGS

தமிழ்  காண : கிளிக்

Hi Everyone,
EGG RINGS!! I make this egg rings as my paleo lunch or dinner , using onions not only makes the egg delicious but also helps to hold the eggs in shape while boiling.I will not boil the yellow part completely I will remove from heat when the yellow yolks are 80% boiled , you can boil till they are completely cooked or remove from heat early itself.
I had it with pepper chicken gravy.
The simple recipe is as below,

INGREDIENTS :
Onion – 1 no ( bigger is better).
Salt – a pinch.
Pepper – 1/4 tsp.
Coriander leaves – few
Egg – 2 nos.
Ghee or coconut oil – few drops.

METHOD :
  1. Cut the onion in middle and gently take the outer ring ( as in picture). The ring depth can be around 0.5 cms.
  2. Heat oil in kadai and place the onions rings , let the onions fry in low flame till golden brown , now flip to next side and boil for few more mins till golden brown .
  3. Gently crack open a egg in middle of egg ring , make sure yolk does not break and sits inside the ring.
  4. Sprinkle oil , chopped onions , coriander leaves , salt , pepper ,close the pan and boil in low flame till white part is cooked well.
  5. And when yellow yolk is half cooked , remove from flame and serve hot.
  6. Egg with onions tastes great and also onion rings help to hold the eggs in shape.

    HAPPY COOKING!!

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
