KERALA EGG BISCUITS

Hi All,
When we were kids my grandfather use to buy this Egg biscuits for us from a shop which was located 15 kms from our home.Though we get good quality biscuits in Pollachi too but that shop was best :) .The bright yellow biscuits soaked in warm milk tastes divine and we cant just stop with one bowl.
Now we get these biscuits in super market too but I say the taste is no where match to that old bakery.
Recently I saw this video in youtube and tried it ,I got the same taste just like our old bakery and I made four batches ,all four batches just vanished in 30 mins.
Happy to share the recipe with you ,

INGREDIENTS :
All purpose flour / Maida – 3/4 cup.
Egg – 2 nos.
Sugar – 5 tablespoon.
Baking powder – 1/2 tsp.
Vanilla essence – 1/2 tsp.
Butter – 2 tablespoon.
Yellow food colour – 2 drops ( optional).


METHOD : 
  1. Pre-heat oven to 180”C – 10 mins.
  2. Mix maida and baking powder in a bowl.
  3. Powder sugar and keep it aside . Bring egg , butter to room temperature.
  4. Either in your food processor or in a bowl add powdered sugar and egg and mix well till sugar dissolves in egg( I used food processor).
  5. To the above mixture add vanilla essence , softened butter and mix well .
  6. Finally add maida mixture little by little and keep mixing.
  7. Mix well till they form creamy consistency.
  8. At this stage if you are adding food colour add it now.
  9. Fill the batter in piping bag and make small drops(or any shapes as you wish) in baking tray .If you don't have piping bag using spoon too you make small drops.
  10. Bake in pre-heated oven for 10 mins , until  base turns to golden brown.
  11. Remove from oven and let the biscuits cool down to room temperature.
  12. Store in airtight containers and enjoy for a week.
