Hi All,
RUM CHOCOLATE CAKE!! As I already told you ,we brought a bottle of rum for making traditional chirstmas cake and I don't know what to do with balance Rum :(.
Then I made Orange rum cocktail , once again fruit cake and still half more cup of rum was remaining so finally I finished it by making this yummy , super soft , chocolate cake.
The sweet recipe is below,
INGREDIENTS :
All purpose flour / Maida – 2 cup / 265 gms.
Sugar – 1 3/4 cup / 380 gms.
Oil – 3/4 cup.
Egg – 4 nos.
Cocoa powder – 1 cup.
Rum – 1/2 cup.
Baking powder – 1 tsp.
Baking soda – 1 tsp.
Salt – 1/4 tsp.
Nutmeg powder– 1/8 tsp.
Hot water – 1 cup.
METHOD :
- Pre-heat oven to 170” C – 30 mins.
- Grease your baking pan with butter or oil and dust with flour.
- Sift dry ingredients together -Maida , cocoa powder , baking powder , baking soda , nutmeg powder,salt for even mixing.
- Either using electric beater or food processor beat oil and sugar together till sugar dissolves with oil.
- Then crack open each egg to oil mixture and beat till foamy , likewise add each egg and beat till mixed.
- Empty the egg mixture to a wide bowl , add dry ingredients , hot water little by little to egg mixture and keep mixing ( I divided them as four batches and added).
- Finally add rum and mix till mixed.
- The mixture must be in ribbon consistency ( as in picture) , if mixture is thick add little more hot water.
- Pour the cake batter to dusted pan and bake for 30 mins or till the tooth pick comes out clean.
- When done remove from oven and let it cool down to room temperature , then invert the cake to wire rack and leave for 1 hour to cool completely.
- That's all ,refrigerate the cake for 1 hour then cut the cake into two halves ,sprinkle sugar water and frost the cake as you wish.
- I frosted with chocolate whipped cream.NOTES :
- Baking time may vary from oven to oven , so after 30 mins of baking check with tooth pick and if required bake for 5 more mins.
- Before frosting refrigerating cake will help you to cut the cake easily without breaking.
