INSTANT ADAI MIX / INSTANT MIXED LENTILS MIX

Hi All,
INSTANT ADAI MIX!! Whenever I go to super markets , I use to stare at this Instant mix section for long time reading the ingredients list in each packet.I always wanted to keep some instant mix in home but in all packets I saw added preservatives so I never buy them.
I want to try something on my own and I tried adai mix first as it requires no fermentation.The process is little long but its worth a trying.
With this adai mix powder my morning breakfast tension is solved..pls follow the recipe and tips for perfect adai that tastes like fresh adais.

The recipe is as below,

INGREDIENTS :
Raw rice – 1/2 cup.
Idli rice – 1/2 cup.
Toor dal – 1/4 cup.
Green moon dal – 2 tablespoon.
Urad dal – 2 tablespoon.
Fenugreek – 1 tsp.
Asafoetida – 1/8 tsp.
Dry red chillies – 5 nos.
Cumin – 1 tsp.
Turmeric powder – 1/4 tsp.
Poha / flattened rice – 2 tsp.
Oats – 2 tsp.
Salt – 2 tsp.

FOR MAKING DOSA:
Adai mix – 4 tablespoon.
Curd – 1 tablespoon.
Water – as required.
Onions – 1 no ( chopped finely)

METHOD :
  1. Wash and rinse raw rice , idli rice , toor dal , moon dal , urad dal , fenugreek well and dry them in shade for 1 to 2 hours.
  2. When rice and lentils becomes dry ,dry roast them in a wide pan till aroma.Remove them to a plate.
  3. Now dry roast oats , poha , dry red chillies ,cumin separately till aroma in low flame.Remove them to the plate and let the mixture come down to room temperature.
  4. When done ,grind everything to little coarse powder along with turmeric powder and asafoetida.
  5. Finally add salt and mix well.
  6. Store the mix in airtight containers and use when required.
  7. Add 2 tablespoons of mix in a bowl and add water,curd to make it into thick batter.
  8. Let the batter rest for 30 mins.
  9. Heat tawa and dizzle few drops of oil and pour the batter to thick circle.
  10. Spread with onions and sprinkle few drops of oil and let the dosa boil in medium flame till golden brown.
  11. Flip it over to next side and boil for few more mins.
  12. Remove from flame and serve hot.
NOTES :
  1. Grind the powder to little coarse to give fresh taste.
  2. Even you can fry and grind the ingredients without washing but I suggest you to wash and dry and then grind to remove impurities.
  3. You can add any lentils for your choice.
  4. I don't like the raw smell of adais so I always ferment them a little , so even in instant mix I added curd ,you can skip curd and add water only also.
  5. You can even mix the instant powder with water and keep it in fridge overnight also.
