COCONUT
KUSKA!! I remember during my childhood days we had a muslim neighbour
who often make kuska in their home , and during festivals they will
make kuska along with briyani and gift us.
Though
the colour of kuska is white but the taste will be spicy and very
aromatic , so my mum got the recipe from them.
My
mother has a habit of adding coconut flowers in all the dishes like
wise she make the kuska also with coconut ,as the taste was awesome
Iam following the same recipe till date.This is an altered recipe
from traditional kuska.
I
made this kuska with plain cooking rice but if you want still rich
taste you can use basmathi rice too.
The
recipe is as below,
INGREDIENTS
:
Rice
– 1 cup .
Onion
– 1 no( big).
Green
chillies – 3 nos.
Curry
leaves – a sprig.
Coriander
leaves – 1/8 cup.
Coconut
grated – 1/4 cup.
Cinnamon
1” piece – 1 no.
Cloves
– 4 nos.
Salt
– as required.
Ghee
/ Coconut oil / refined oil – 3 tsp.
Mustard
– 1/4 tsp.
Cumin
/ Jeera – 1/4 tsp.
Eggs
– 3 nos ( optional).
PREPARATION
:
- Wash and cook rice with required amount of water , when rice is cooked transfer them to a wide plate , add 1 tsp oil and plough it with fork ( this is done to ensure the rice does not turn mushy and also to cool down completely).
- Chop onions,coriander leaves and green chillies.
- In a small pan dry roast cinnamon , cloves till aroma comes .Remove from flame and grind them to fine powder.
- Heat oil in wide kadai followed by mustard , cumin and when cumin stars spluttering add green chillies and fry till it changes colour.
- Then add onions , curry leaves and fry till golden brown.Add powdered cinnamon,cloves to the kadai and saute for a minute.
- If you are adding egg , add at this stage and fry till the eggs form small balls and not stick to each other and also to the kadai.
- Add coconut,coriander leaves , salt and mix well until all the ingredients incorporate with each other.
- Finally add boiled rice and mix well.
- Remove from flame and serve hot with side dish of your choice.I served with gobi manchurian.
NOTES
:
- I used normal rice you can use basmathi rice too.
- Adding egg is purely optional , you can even skip it.
- I used coconut oil you can replace with ghee too.
