All,
UTTAPAM...uttapam
is not too tough recipe but the spongy ,smooth ,perfect shaped
uttapam is the trick and it depends on batter combination and
consistency.
The
recipe is as same as Dosa batter but for utappam you need to take
care during adding water.
My
husband loves uttapam but Iam lazy to make it as it needs little
patience to make uttapam.
Yesterday
I want to surprise him on weekend with his favorite dish for dinner
so planned for utapam.
I
made little twist in garnishing by mixing masala powder and it worked
too.We loved it even without sidedish.
The
recipe is as below,
INGREDIENTS
:
BATTER
:
Raw
rice / Idli rice – 5 cups.
Urad
dal – 1 cup.
Fenugreek
/ Vendhayam – 5 tsp.
Salt
– as required.
FOR
UTTAPAM :
Carrot
– 1 no ( big size)
Coriander
leaves – a bunch
Tomatoes
– 2 no.
Idli
Podi / Idli Mialagai powder - 4 tsp.
Garam
masala – 1 tsp ( optional)
Onion
– 2 nos (big).
Oil
– as required.

PREPARATION
:
- Wash and soak rice with required amount of water.Same way wash and soak urad dal along with fenugreek with required amount of water for 2 hours.
- After 2 hours of soaking grind urad,fenugreek with little amount of water to smooth paste.
- Then grind rice also to fine batter and mix with urad dal paste.Add required amount of salt and mix well.
- Leave the batter undisturbed for 7 hours for fermentation.
- After 7 to 8 hours of fermentation ,the batter must have increased to double the size ,mix well ( For step by step picture pls click the link).
- Grate carrot .Chop onions , tomatoes , onions to bite sized pieces.Add garam masala to onions , tomatoes , carrot and mix.
- Heat iron skillet and spread few drops of oil.
- Take a ladle full of batter and pour in skillet ,using ladle spread the batter to thick,even circle.

9.Sprinkle idli powder evenly over the boiling uttapam and Spread onions or tomatoes or coriander leaves of your choice.
- Let the uttpam boil in medium flame till edges turn brown .Flip the uttapam to other side gently and boil for 2 more mins.
- Remove from flame and serve hot with Sambar and chutney of your choice.
- The best combinations with uttapam are Saravana Bhavan sambar , Karachutney , Brocolli moongdal gravy ,Plain tomato chutney.
NOTES
:
- The batter must be thick , add enough water to form idli batter consistency.
- Don't make thin uttpam , thick utthapam gives you spongy , soft texture.
