THATAMURUKU / THATAVADAI

Festival Josh has started! Everyone will be busily planning for festivals , So Iam!!
Thatavadai or Thatamurku is one crispy snack which we cannot stop munching.
Before marriage when I was working ,we use to return home in office bus.On the way we stop at a shop where they make fresh thatamurku! The hot crispy thatamurku just melts in mouth.
I want my recipes to be simple so I got this recipe from my mother . The recipe is so simple that you can use the same dough with little modifications and make muruku too.

SERVINGS : YIELDS ABOUT 25 THATAMURKUS.

INGREDIENTS :
Idli rice or normal rice(which we use for preparing lunch ) - 4 cups.
Roasted channa dal – 1 ¼ cup
Roasted channa dal - 2 tsp.
Butter / Vanaspati – 100 gms ( appx ½ cup)
Sesame seeds – 4 tsp
Cumin – 1 tsp
Ajwain / Omam – ½ tsp
Salt – 2 tsp ( as required ) .
Chilli powder – 2 tsp.
Oil – for deep frying.

PREPARATION:
  1. Soak rice for 2 to 3 hours ,after 3 hours of soaking drain the water and with very little water grind the rice to fine paste(as in picture).

  2. Finely powder the roasted channa dal.
  3. Slightly dry roast Sesame seeds , cumin , ajwain.Also dry roast 2 tsp roasted channa dal for a minute.

  4. In a wide bowl add grounded rice paste , channa dal powder , roasted sesame , cumin , ajwain,butter , salt,chilli powder,roasted channa dal and mix well with hands.
  5. Knead well till butter and other ingredients mixes well with rice dough.
  6. In an even surface spread a neat cloth .
  7. Take a lemon size dough and place in one end of cloth ,take the other side of cloth and place it over the dough , then press it using your palm.
  8. Flatten all the dough balls in same way.
    Make pricks using fork.
  9. Heat oil in wide kadai , drop each disc one by one in hot oil and fry in medium flame until golden colour.
  10. Remove from oil and drain the oil completely.
  11. Same way fry the entire dough , let the thatamurkus reach room temperature.
  12. Store them in airtight container ,when properly stored the murukus will remain fresh for a week.

NOTES:
1) Always flatten the dough using cloth as the dough will be spicy and it will burn your hands if you flatten using hands.Also using cloth will make even flat.
