COCONUT CRUST MOUSSE

Hi,

After making a huge batch of whipped cream really I didn't  know what to do with the leftover cream.I made cake out of it and then I want to use the balance cream quickly but something innovative.So tried this coconut crust mousse,
After making this crust , we had the crust as it is as the taste was amazing . The spicy crust topped with rose mousse and chilled it for 4 hours and then we tasted it .Really it was awesome.
This is the first time Iam trying coconut crust dishes and we all loved it.As coconut itself has sweet in it and we don't like much sweet so I added spice powders and made it spicy,sweet twist.

The recipe is as below,

INGREDIENTS :

CRUST:
Coconut - 1 cup ( grated).
Egg – 1 no
Sugar – 2 tsp
Chilli powder – 1 tsp
Garam masala or any spice powder as you wish – 1 tsp.
Salt – 1/2 tsp

MOUSSE :
Whipped cream – 1 cup.
Rose essence – 2 drops.
Cherries chopped – for garnishing

PREPARATION :
  1. In a bowl add grated coconut , egg , sugar , chilli powder , garam masala ,salt and mix well.


  2. Pre-heat oven @180 for 15 mins.
  3. In oven safe greased cup cake mould spread the coconut mixture as thin layer . Don't make thick layer thin layer will give you crispy crust.

  4. Bake it in pre-heated oven for 15 to 20 mins  until the edges turn brown.
  5. Remove from oven and bring it to room temperature.
  6. In a bowl mix whipped cream and rose essence and fill them in coconut crust. 
     
  7. Garnish with chopped cherries , chill them for 1 hour and enjoy.

  8. Believe me ,try it once and  you will love the spicy coconut with sweet rose twist .
